Job Description

The City of Corpus Christi operates an integral Central Kitchen that serves a vital role in supporting the nutritional needs of the community's senior population. This facility produces and packages lunches daily for approximately 900 senior participants through various programs such as Senior Centers, Nutrition Sites, and the Home Delivered Meal Program. As a municipal service provider, the City of Corpus Christi emphasizes quality, safety, and care in its food service operations, complying with local health regulations and HACCP standards. The Central Kitchen is equipped with modern commercial appliances and works under strict sanitation and operational protocols to ensure the delivery of nutritious meals that meet dietary requirements and food safety standards.

The Cook position at the Central Kitchen is a full-time, non-exempt role primarily responsible for preparing and packaging meals in large quantities to serve multiple senior facilities each day. This role demands a detail-oriented individual capable of accurately converting recipes to meet daily meal counts and handling various food preparation tasks such as slicing, mixing, cooking, and portioning. The Cook works with commercial kitchen equipment including immersion blenders, ovens, steamers, and can openers, and must maintain high standards of cleanliness and sanitation throughout food preparation and post-cooking processes.

Beyond food preparation, this position involves maintaining meticulous temperature logs, ensuring compliance with local and state health standards, proper sanitization of kitchen equipment and surfaces, managing inventories, and working cooperatively with the kitchen team. The Cook must also demonstrate flexibility, as the role requires working additional hours, including evenings, weekends, and holidays, especially in emergency situations where the continuity of public nutritional services is critical.

Job Requirements

  • high school diploma or GED
  • two years of experience in a related role
  • valid driver’s license with ability to obtain Texas driver’s license within 90 days if out-of-state
  • food manager’s certification within 30 days of hire
  • CPR certification within three months of hire
  • first aid certification within three months of hire
  • successful completion of criminal background check, motor vehicle record check, drug screening, and physical exam
  • availability to work additional hours including evenings, weekends, holidays, and emergency situations

Job Qualifications

Job Duties

  • understands the written and verbal instructions for food preparation and converts recipes to correct quantities for daily meal counts
  • slices and prepares a variety of food items by hand including fruits, vegetables, meats, fish, poultry, and cake
  • operates commercial immersion blender, electric and manual can openers, industrial steamer, and ovens to prepare food as required
  • cooks using gas and electric ovens and prepares food in large roasting pans on the range
  • mixes, measures, and combines a variety of ingredients adjusting cooking temperatures and speeds as needed
  • loads and unloads pans onto carts and into warmers weighing up to 25 pounds
  • transfers prepared food into standard size cafeteria pans for multiple senior centers and nutrition sites and the home delivered meal program
  • keeps temperature logs for every menu item prepared
  • cleans and sanitizes kitchen surfaces, equipment, and utensils in accordance with health department and HACCP rules
  • takes out trash to outside dumpster
  • works cooperatively with kitchen crew to achieve high scores on food service establishment inspections
  • follows all sanitation and food safety rules and records inventory usage
  • monitors taste, texture, color, and smell of food during preparation and packing
  • reads pocket thermometer and monitors manual dexterity and sensory acuity
