The position of Cook at SUN Behavioral Health is a pivotal role within the Dietary Services Department, under the direct supervision of the Director of Dietary Services. The cook is responsible for preparing, seasoning, and cooking food for hospital patients, staff, and visitors. This role demands adherence to specific dietary guidelines and infection control protocols to maintain the highest standards of food safety and patient care. The cook contributes to inventory control practices and ensures the kitchen is maintained in a clean and organized manner post-meal preparation, conforming to stringent hygiene and safety standards.

In this role, the cook determines types and quantities of menu items to prepare by reviewing planned menus and coordinates food orders to meet weekly requirements. They are skilled in using various food preparation equipment such as blenders, mixers, grinders, and slicers to mix ingredients and create meals including sauces, soups, stews, casseroles, and desserts that comply with established dietary and health guidelines. The cook executes various cooking techniques such as baking, roasting, broiling, and steaming to prepare meats, fish, and poultry, ensuring that all meals are prepared to the proper temperature and seasoning standards.

Beyond food preparation, the cook supervises Food Services Workers during food washing, trimming, and prepping stages, and collaborates with Registered Dietitians to manage modified diets as required by patient needs. This role also encompasses ensuring infection prevention measures are observed, assisting with patient serving when necessary, and supporting a culture of patient safety and quality. The cook actively participates in safety programs, reports and corrects hazards, and engages in quality improvement initiatives.

Job Requirements

  • Three years of experience in a food service line or restaurant setting
  • CPR and hospital-selected de-escalation technique certification

Job Qualifications

Job Duties

  • Determines types and quantities of meats, vegetables and soups to be prepared by reviewing planned menus
  • Determines amount of foods needed to meet weekly menus and submits order to supervisor
  • Ensures meals are ready at specified times
  • Consults with supervisor regarding use of leftovers
  • Consults Registered Dietitian on modified diets, as necessary
  • Supervises Food Services Workers when washing, trimming or preparing food
  • Measures and mixes ingredients according to approved recipes, using blenders, mixers, grinders, slicers, etc
  • Makes sauces, soups, stews, casseroles and desserts meeting established dietary guidelines
  • Cooks meat, fish and fowl in a variety of ways such as baking, roasting, broiling and steaming
  • Carves meat, fish and fowl into individual servings according to menu combinations and patient diet orders
  • Tests foods being cooked to ensure proper cooking temperatures and balanced seasoning
  • Adjusts heat controls as necessary
  • Maintains kitchen cleanliness and adheres to infection control standards
  • Assists in serving patients, when necessary
  • Performs all aspects of patient care in a safe and quality-driven environment
  • Supports and maintains a culture of safety and quality
  • Works with supervisor to ensure food service staff are trained on fire suppression and PPE protection
  • Performs other duties as assigned
