The Cook 1 position at OHSU is a vital role within the culinary team, focused on the preparation, service, and support of both retail and patient food services. This role is particularly dynamic and demanding, requiring an individual who can excel under pressure while maintaining a high level of precision and attention to detail. The production cook will engage extensively with fellow culinary team members, ensuring seamless daily operations during peak and break periods. Responsibilities also include meat and poultry fabrication tasks, as the cook supports and steps in for colleagues when needed.

OHSU's Cook 1 is expected to produce and prepare simple yet varied dishes following standardized menus, recipes, or verbal directions provided by supervisors. The culinary skills employed range from making salads, dressings, and sandwiches to soups and more complex meat-related preparations. The position requires proficient use of multiple kitchen appliances and tools such as grills, charbroilers, ovens, tilt grills, steam kettles and ovens, choppers, blenders, and slicers. A strong emphasis is placed on maintaining cleanliness and hygiene standards, including routine cleaning of equipment and work areas through mopping, sweeping, and scrubbing.

Additional duties include preparing special menu items and requests, handling specialty and individualized services tailored to patient and guest needs, and managing the conveyance and proper storage of supplies. The cook must adhere strictly to OHSU’s food safety protocols, including temperature monitoring and recording, ensuring compliance with food safety regulations at all times. The role also covers assisting with banquet services and other special culinary assignments. This position demands stamina and physical endurance due to exposure to challenging environments such as loud noises, varying temperatures, and the need for continuous standing and manual labor including lifting, pulling, and bending.

Job Requirements

  • An OR food handlers' card or equivalent
  • Food Protection Manager Certification with 6 months of hire
  • Two years of experience as a cook in a commercial food service facility or possession of a certificate of completion in culinary arts and/or foods and hospitality service from a certified community college or technical school
  • Basic knowledge of therapeutic diets
  • Ability in checking trays to ensure diet cards have been accurately followed
  • Good understanding of math
  • Customer service skills
  • Cleanliness and food handling skills
  • Ability for continuous standing, moving, bending, walking, lifting up to 50 pounds, pulling, twisting, moving
  • Exposure to loud noise, heat, grease, cold

Job Qualifications

  • Possession of a certificate of completion in culinary arts and/or foods and hospitality service from a certified community college or technical school
  • Food handlers' card or Servsafe certificate obtained by hire date
  • Food Protection Manager Certification with 6 months of hire
  • Two years of experience as a cook in a commercial food service facility
