Job Description

The Production Cook (Cook 1) role at OHSU plays an essential part within the Food & Nutrition department, providing high-quality food preparation and service tailored primarily for patient and retail settings. This position requires an individual who thrives in a highly interactive environment with fellow team members and customers, possessing exceptional service skills, keen attention to detail, and the ability to multitask effectively under pressure. As a key player in the kitchen, the Production Cook handles a wide range of culinary duties—preparing meals according to standardized recipes and menus, including salads, soups, sandwiches, eggs, various proteins such as meat, fish, and poultry, and specialty items like sushi. The role demands proficiency in using commercial kitchen equipment such as grills, char-broilers, ovens, steam kettles, and blenders.
Moreover, the Production Cook is entrusted with maintaining cleanliness and sanitation standards in line with state health department regulations and OHSU's Food & Nutrition Handbook, ensuring a safe and hygienic food environment. Responsibilities also extend to equipment maintenance, monitoring food temperatures, managing food waste, and handling some transportation of food items between kitchen locations. This role sometimes involves covering other cook positions during breaks or absences and contributing to special event preparations including banquets.
The position requires physical stamina and the ability to lift weights ranging from 30 to 50 pounds regularly. Job Requirements
- High school diploma or equivalent
- An OR food handlers card or equivalent
- Food Protection Manager Certification with 6 months of hire
- Two years of experience as a cook in a commercial food service facility OR possession of a Certificate of Completion in culinary arts and/or Foods and Hospitality Service from a certified community college or technical school
- Ability to lift 30 to 50 pounds on a regular basis
- Compliance with sanitation and food safety standards
- Ability to work under pressure and multitask effectively
- Excellent customer service skills
Job Qualifications
- An OR food handlers card or equivalent
- Food Protection Manager Certification with 6 months of hire
- Two years of experience as a cook in a commercial food service facility OR possession of a Certificate of Completion in culinary arts and/or Foods and Hospitality Service from a certified community college or technical school
- Food handlers card or Servsafe certificate obtained by hire date
- Basic knowledge of therapeutic diets
- Ability in checking trays to ensure diet cards have been accurately followed
Job Duties
- Prepare (physically produce) existing and new recipes for patients and guests
- Production and service of menu items, special requests preparation, specialty and individualized services unique to patients and guests
- Conveyance of supplies, storage of foods employing OSHU specified controls, temperature monitoring and recording and food and work safety compliance assurance
- Cleaning
- Covering co-workers for breaks and absences
- Special preparation, banquets, special assignments
