Job Requirements

  • Minimum of 4 years experience in a professional kitchen, hotel, convention center, catering or upscale restaurant with scratch culinary production
  • Knowledge of from scratch dressing, cooking, and presentation of cold platters
  • Strong knife skills including cutting, chopping, carving, dicing
  • Ability to work shifts on weekends and flexible schedule
  • Ability to fill-in at other stations as needed
  • Ability to work in a team-oriented environment and under considerable stress
  • Responsible for station hygiene and sanitation as per Davidson County Sanitation Mandate
  • Able to work effectively and safely with exposure to wet floors, temperature extremes, and noise
  • Must be able to lift up to 50 pounds and maneuver in tight spaces
  • Must be able to supervise and train others
  • Hours may include nights, weekends, and holidays

Job Qualifications

  • Minimum of 3 years experience in food preparation in a fast paced environment
  • Culinary degree from an accredited college or university preferred
  • Ability to interact verbally and listen attentively to co-workers and supervisors
  • Ability to follow written and oral directions
  • Ability to work under pressure and independently
  • ServSafe certification preferred

Job Duties

  • Lead cooks and temporary professionals for the shift
  • Prepare and present cold foods including salads, cold soups, meats, and cheeses
  • Perform mise en place and follow recipes
  • Maintain station hygiene and sanitation according to local mandates
  • Manage inventory, preparation, and presentation of select dishes
  • Train and supervise others
  • Assist with other culinary duties such as hot side or banquet plate-up as needed
