Job Requirements
- Must obtain and maintain valid licenses and certifications as required by Federal, State, and Gaming regulations
- Successfully pass background check
- Successfully pass drug screening
- Be at least twenty-one (21) years of age
- Knowledge of pertinent laws, codes, and regulations
- Familiarity with all applicable health, sanitation, and licensing ordinances
- Know food products, standard recipes, and proper preparation techniques
- Understand computer programs and applications related to kitchen management
- Comprehend standard safety and sanitation practices
- Demonstrate organizational and budgeting skills
- Ability to use kitchen tools including knives, slicers, and choppers
- Capacity to inspect food quality
- Deliver exceptional guest service and develop strong guest relations
- Communicate clearly and concisely both orally and in writing
- Be flexible with work shifts
- Manage work under noise, crowds, and variable environmental conditions
Job Qualifications
- High school diploma or equivalent
- Degree or certification from a recognized culinary program, apprenticeship, or culinary school
- Minimum five years’ experience as Executive Chef in a 4-star or 5-star establishment with significant conference and banqueting facilities
- Previous supervisory experience
- Knowledge of federal, state, and local regulations, health and sanitation requirements
- Proficient in budgeting, organizational skills, and kitchen operations
- Strong communication and leadership abilities
- Ability to pass background and drug screening
- Minimum age of 21 years
Job Duties
- Create an atmosphere that encourages guests to choose Hard Rock Hotel & Casino Sacramento at Fire Mountain for gaming and dining entertainment
- Hire, train, motivate, evaluate, and supervise kitchen staff to ensure achievement of objectives
- Supervise all food outlets and kitchen personnel for quality and efficiency
- Plan menus considering market trends, holidays, and guest preferences
- Check food preparation methods, portion sizes, and presentation by tasting
- Procure food supplies and kitchen equipment from approved suppliers and approve quality
- Manage storage of food items ensuring quality and compliance with health regulations
- Collaborate with catering sales to design special menus
- Monitor and adjust food costs and pricing to meet budgetary guidelines
- Participate in meetings and complete assigned follow-ups
- Maintain cleanliness and sanitation of work and public areas
- Perform additional duties as assigned
