The Restaurant Sous Chef role at Saks Global Restaurants is a pivotal leadership position responsible for upholding and promoting the highest standards of culinary excellence within its luxury restaurant operations. The Sous Chef will focus heavily on food safety, sanitation, and regulatory compliance, as well as managing inventory, forecasting food costs, and driving performance metrics that reflect superior operational standards. Leadership and development of culinary associates will be fundamental, as this role demands effective coaching, mentoring, conflict resolution, and fostering a culture of accountability and teamwork.
Ideal candidates bring 4-6 years of progressive culinary experience in premium, fine-dining, or luxury high-volume kitchens, coupled with business acumen in managing food cost and inventory control. A culinary arts degree or a related four-year degree is preferred. This role also requires flexibility with scheduling, including evenings, weekends, and holidays, given the nature of hospitality operations. Physical stamina to handle demanding kitchen environments and a high level of proficiency with digital tools such as Google Workspace and Microsoft Office are also expected.

Job Requirements
- 4-6 years of progressive culinary experience in a premium, fine-dining, or luxury high-volume kitchen
- 4-year degree or culinary arts degree preferred
- Proven leadership track record in motivating and coaching kitchen teams
- Foundational financial acumen managing food costs, waste, and inventory
- Exceptional communication and interpersonal skills
- Thorough knowledge of order of service, kitchen ticket systems, and presentation guidelines
- Strong attention to detail, highly organized, and exceptional problem-solving abilities
- Basic proficiency with Google Workspace and MS Office
- Physical stamina for extended standing, bending, climbing stairs, lifting up to 35 pounds
- Willingness to work a flexible schedule including evenings, weekends, and holidays
Job Qualifications

Job Duties
- Monitors, organizes, and expedites plates leaving the kitchen to ensure flawless presentation, temperature, and flavor profile
- Inspects each cook station daily to monitor prep lists, par levels, and overall service readiness
- Creates and executes daily specials and soups, maintaining the recipe book with clear instructions
- Maintains technical mastery of all kitchen roles, stepping into any culinary position as needed
- Collaborates with front of house staff to execute tickets, handle dietary restrictions, and accommodate special guest requests
- Monitors food inventories to minimize waste and optimize food costs
- Manages inventory counts, processes invoices, and assists with forecasting
- Plans and executes catering menus, private parties, and special promotions
- Drives culinary team performance to achieve high secret shop and sanitation scores
- Oversees cleanliness and sanitation compliance in kitchen and storage areas
- Enforces health and sanitation standards as per Saks Global and regulatory authorities
- Oversees culinary associates' daily tasks, coaching and mentoring team members
- Responsible for onboarding, coaching, and counseling direct reports
- Enforces company policies and delivers conflict resolution and disciplinary actions when necessary
- Communicates effectively with kitchen and management staff for operational alignment
- Participates in weekly department meetings to relay updates and corporate news
