Job Description

Palisades Tahoe, operated under Palisades Tahoe Resort, LLC, is a premier mountain resort known for its iconic ski slopes and stunning natural beauty. Located in California, the resort offers world-class winter sports experiences complemented by diverse dining and recreational options. As part of its commitment to delivering exceptional guest service and maintaining the spirit of the legendary mountains, Palisades Tahoe employs a broad range of hospitality professionals dedicated to quality and innovation in their respective roles.

Gold Coast is one of Palisades Tahoe's mid-mountain quick-serve lodges, known for its variety of dining options including fusion burritos at Funi's, international cuisine in the food court, and multiple outdoor food stations. Gold Coast also serves a vital role in supporting local ski teams through collaborative lunch programs. The establishment features two full-service bars and multiple food service locations such as Marketplace, ARC, and 39*, catering to diverse guest preferences in a vibrant mountain setting.

The position available is that of a Kitchen Manager responsible for overseeing all food production and kitchen operations at Gold Coast. This includes managing operations at various dining areas such as Funis, Marketplace, ARC, and 39*. The Kitchen Manager's responsibilities span menu and recipe development, team performance optimization, cost controls, employee training and retention, and waste management initiatives including recycling and composting to align with the resort's sustainability goals. This role demands a proactive leader who fosters a fun and welcoming atmosphere for guests, co-workers, and employees alike, ensuring that Palisades Tahoe's values are reflected in every guest and employee interaction.

The Kitchen Manager will supervise a team of 30 to 50 employees and three Sous Chefs, driving operational excellence through enforcing sanitation, health, and safety standards, estimating food costs and profits, overseeing food quality and inventory, and implementing strategies to minimize waste while maintaining high culinary standards. They will also be responsible for budgeting, labor management, compliance with federal and state labor laws, and enforcing company policies about payroll, employment, and safety.

Candidates for this role should have at least a Bachelor's Degree or equivalent culinary education, five years of kitchen management experience, and three years in a supervisory role. Holding or the ability to obtain a California Food Handlers Card and applicable health and alcohol compliance certifications is required. Preference is given to candidates with kitchen management experience in a resort setting and knowledge of Palisades Tahoe's food and beverage outlets.

Physical demands of the job include being able to walk or stand for 80% or more of an 8-hour shift, lifting or moving objects up to 25 pounds, and possessing specific vision capabilities. The job involves exposure to various environmental conditions including outdoor weather, loud noise, and potential hazards related to kitchen equipment and cleaning chemicals.

This is a salaried position with a base pay range of $67,082 to $93,914 per year, including a comprehensive benefits package. Job Requirements

  • Bachelor’s Degree or culinary school graduate or equivalent
  • Five years kitchen management and/or training experience
  • Three years supervisory experience
  • Must have or be able to obtain California Food Handlers Card
  • State applicable health and/or alcohol compliance card
  • Ability to manage and lead a team of 30-50 employees
  • Knowledge of food safety, sanitation, and labor laws
  • Physical ability to stand and walk for extended periods
  • Ability to lift or carry up to 25 pounds
  • Effective communication and interpersonal skills

Job Duties

  • Manage all aspects of food production and kitchen operations at Gold Coast including Funis, Marketplace, ARC, and 39*
  • Develop menus and recipes in consultation with management
  • Supervise cooks and kitchen employees ensuring quality and safety standards
  • Oversee food cost control measures including portion control and waste minimization
  • Implement training and development programs for kitchen staff
  • Participate in Palisades Tahoe’s waste management initiatives such as recycling and composting
  • Enforce health, safety, and sanitation standards in compliance with legal regulations
  • Manage labor budget, payroll, and scheduling to meet financial objectives
  • Lead hiring, training, performance appraisals, and disciplinary actions according to company policies
  • Foster a positive and customer-focused team environment consistent with company values
