The Restaurant at JUSTIN Vineyards & Winery, located in the scenic Paso Robles, California, is an award-winning destination known for its Michelin Starred tasting menu, led by Chef Rachel Haggstrom. This restaurant offers a hyper-seasonal tasting experience that highlights produce sourced directly from its 26-acre farmstead as well as from local ranchers and farmers in the Central Coast region. It operates four nights a week, delivering a culinary journey that is deeply connected to the terroir and designed to provide an unforgettable dining experience. The restaurant's commitment to sustainability is evident in its Michelin Green Star distinction, making it the only winery in the nation honored with both Michelin and Green Star recognitions.
The role of Chef de Cuisine at The Restaurant at JUSTIN is a rare opportunity to lead a Michelin Starred kitchen with a focus on innovation, seasonality, and wine pairing. This position requires relocation to the Paso Robles area and is suited for a hands-on leader who thrives in a creative environment that balances culinary artistry with sustainable practices. The Chef de Cuisine will collaborate closely with the farmstead team and senior leadership, continually pushing the boundaries of the tasting menu to create return-worthy experiences for guests.
Key responsibilities include overseeing dinner service and mentoring kitchen staff while fostering a positive and collaborative work culture. The role demands a strong background in Michelin starred kitchens, ideally with experience in 2 or 3-star venues, and a passion for culinary excellence. Candidates with exposure to James Beard or World’s 50 Best awards will be highly regarded. The position offers a competitive base salary ranging from $90,000 to $120,000 depending on experience, along with a bonus program, generous paid time off, comprehensive medical, dental, and vision benefits, a 401k plan with matching contributions, and relocation assistance.
This evolving program encourages creativity within the framework of seasonality and wine pairing, supported by the restaurant’s orchard, apiary, and chef garden, making it an inspiring place for culinary innovation. The ideal Chef de Cuisine is dedicated to elevating both the dining experience and kitchen team, ensuring the restaurant continues to garner prestigious recognitions and provide guests with exceptional moments that embody the spirit of the Central Coast.
