Job Description

Eataly is the world's largest artisanal Italian food and beverage marketplace, renowned for offering a unique and authentic Italian culinary experience. Eataly seeks to hire a Chef de Cuisine (CDC) to join its leadership team, supporting the Executive Chef in all aspects of the production of authentic Italian dishes within the restaurants. This role demands a highly skilled culinary professional who excels not only in Italian cuisine expertise but also in managing kitchen operations, food quality, team leadership, and guest satisfaction. Reporting directly to the Executive Chef, the CDC oversees a team of Sous Chef Managers and plays a pivotal role in planning and executing seasonal menus that reflect Italian culinary excellence and meet Eataly's high standards.

The Chef de Cuisine will be responsible for directing staffing activities including hiring, training, scheduling, payroll management, and performance evaluations of kitchen team members. Maintaining budget adherence through careful review of sales, costs, and labor expenses is also essential. In addition to managing inventory by estimating needs, placing orders, and verifying deliveries, the CDC ensures front-of-house staff are well-informed of menu changes, specials, and any shortages. The CDC must be proactive in documenting, investigating, and resolving any employee or guest incidents, consistently upholding Eataly's commitment to quality and customer satisfaction.

This full-time position requires availability for flexible scheduling, including evenings, weekends, and holidays. With a competitive salary range of $80,000 to $85,000 annually, the role offers a vibrant, fast-paced environment where culinary creativity meets operational expertise. Job Requirements

  • Availability to work onsite with a flexible schedule including evenings, weekends and holidays
  • Ability to lift up to 50 pounds
  • Ability to exert well-paced mobility for up to 8 hours, including standing, walking, bending and squatting
  • Ability to use commercial kitchen equipment including stand mixers, ovens, torches, etc.

Job Qualifications

  • 5+ years of chef experience, including 2+ years of management experience
  • Knowledge of Italian cuisine
  • Excellent communication and leadership skills
  • Advanced computer skills
  • Bachelor’s Degree or degree from a post-secondary culinary arts training program highly preferred

Job Duties

  • Collaborates with Executive Chef team to plan and execute seasonal menus in restaurants
  • Directs employee hiring, assignment, training, payroll, scheduling, evaluations and terminations
  • Reviews financial information such as sales, costs and labor, to ensure adherence to budgets
  • Manages inventory including estimating needs, placing orders, receiving and checking deliveries
  • Informs front of house personnel of menu changes, specials and shortages
  • Documents, investigates, escalates and resolves employee or guest incidents
  • Performs other duties as required or assigned
