The Department of Auxiliary Operations at the University of Rochester is currently seeking a full-time Kitchen Manager to oversee the day-to-day operations of the kitchen within the University’s dining program. This critical role involves leading a team of culinary professionals and working closely with culinary leadership to maintain and elevate the quality of food and service provided to students, faculty, and staff. With a working schedule of 40 hours per week and a rotating shift pattern, this position offers a salary range of $64,200 to $96,200, commensurate with experience, education, and qualifications.
As Kitchen Manager, you will be responsible for a wide array of tasks that include supervising and mentoring kitchen staff such as chefs, line cooks, and support personnel to ensure efficient kitchen operations. You will spearhead menu creation, development, and implementation to provide nutritious, balanced, and appealing meals that meet the diverse dietary needs and preferences of the University community. Key responsibilities include managing food production with strict adherence to food safety and sanitation standards, while fostering a positive and collaborative kitchen environment. You will play an integral role in budget management, inventory control, and procurement planning to optimize resource use and minimize waste.

Job Requirements
- Culinary Arts degree or equivalent professional culinary training
- Minimum 3 years professional kitchen experience
- Experience managing kitchen staff
- Strong knowledge of food safety regulations
- Ability to work nights, weekends, and holidays as needed
- ServSafe certification within 1 year
- AllerTrain certification within 1 year
- Ability to lead and motivate a culinary team
- Skill in managing multiple tasks and meeting deadlines
- Excellent communication and organizational skills
- Understanding of budget management, food costs, and inventory control
Job Qualifications

Job Duties
- Supervises and leads day-to-day kitchen operations including chefs, line cooks, and kitchen staff
- Supports training, development, and mentorship of kitchen staff
- Fosters a positive and cooperative team environment with clear communication
- Assists with staff scheduling to ensure coverage
- Collaborates on menu creation, development, and planning ensuring meals are nutritious and balanced
- Oversees preparation, cooking, and presentation of meals ensuring quality and consistency
- Ensures food safety and sanitation guidelines are met including handling of allergens
- Conducts quality control checks on prepared dishes
- Manages kitchen budgets, tracks inventory, and assists with procurement
- Coordinates special event menus, catering, and dining promotions
- Stays updated with culinary industry trends and participates in continuing education
