Job Requirements

  • Must be eighteen years of age
  • Must obtain and maintain all required federal, state, and gaming licenses and certifications
  • Must pass background check
  • Must pass drug screening
  • Ability to work flexible shifts and varying schedules
  • Knowledge of applicable health, sanitation, and licensing ordinances
  • Ability to work in varying levels of noise and environmental conditions

Job Qualifications

  • High school diploma or equivalent
  • Degree from a certified food service program, apprenticeship, or culinary school
  • Minimum five years of experience as an Executive Chef in a 4 or 5 star establishment with significant conference and banqueting facilities
  • Previous supervisory experience
  • Knowledge of food products, standard recipes, and kitchen operations
  • Ability to use kitchen tools such as knives, slicers, and choppers
  • Strong communication and leadership skills

Job Duties

  • Create an atmosphere that encourages guests to choose Hard Rock Sacramento at Fire Mountain for entertainment
  • Hire, train, motivate, evaluate, and supervise kitchen staff
  • Supervise all food outlets and kitchen personnel
  • Plan menus considering market conditions and holidays
  • Check food preparation methods, portion sizes, and presentation by tasting
  • Procure food supplies and equipment from approved suppliers and approve quality
  • Manage food storage to ensure quality and compliance with health regulations
