Job Requirements

  • Must obtain and maintain valid licenses and certifications per Federal, State, and Gaming regulations
  • Must successfully pass background check
  • Must successfully pass drug screening
  • Must be at least twenty-one years of age
  • Must successfully pass ServeSafe Certifications
  • Ability to use kitchen tools including knives, slicers, and choppers
  • Ability to review and comprehend recipes and other necessary documentation
  • Ability to inspect quality of all food items
  • Ability to plan, prepare, and execute plated and buffet functions for up to 2500 guests in multiple venues
  • Ability to deliver service that creates a positive and memorable guest experience
  • Ability to communicate clearly and concisely both orally and in writing
  • Ability to observe and direct actions of subordinates
  • Ability to participate in the development and administration of goals, objectives, and procedures
  • Ability to establish and maintain effective working relationships
  • Flexible to work varying shifts and schedules
  • Able to endure varying levels of noise, crowds, and temperature extremes associated with the casino environment

Job Qualifications

  • High school diploma or equivalent
  • Degree from a certified food service program, apprenticeship, or culinary school
  • Previous supervisory experience required
  • Minimum of 1 year experience as Banquet Chef or similar role with 500+ cover counts in a 4-star or 5-star establishment
  • Knowledge of federal, state, and local laws, codes, and regulations
  • Familiarity with health, sanitation, and licensing ordinances
  • Understanding of food products, standard recipes, and preparation
  • Proficiency in computer programs and applications relevant to the position
  • Knowledge of standard safety and sanitation practices for food and beverage service
  • Complete understanding of kitchen operations
  • Demonstrated organizational skills and budgeting experience
  • Full understanding of financial management

Job Duties

  • Create an atmosphere that induces guests to choose Hard Rock Hotel & Casino Sacramento at Fire Mountain for gaming entertainment
  • Hire, train, motivate, evaluate, and supervise kitchen staff to ensure adequate guidance and resource allocation
  • Manage food outlets and kitchen personnel to maintain quality and efficiency
  • Understand and implement department objectives, standards, guidelines, and budget
  • Establish and maintain training and development procedures to achieve superior guest service standards
  • Plan and create menus considering marketing conditions, dish popularity, holidays, and special events
  • Evaluate sales data and guest feedback to update and maintain menu programs
  • Check methods of food preparation, portion sizes, and garnishing of foods by tasting
  • Procure food supplies and kitchen equipment from approved suppliers and approve quality
  • Ensure proper storage of food items to maintain quality and compliance with health requirements
  • Implement and manage food safety practices among team members
  • Collaborate with purchasing department to ensure high-quality food products
  • Consult with catering sales manager and clients to tailor special menus
  • Track food cost variances and adjust pricing to ensure net profit
  • Meet budgetary guidelines for food cost, labor cost, and miscellaneous expenses
  • Attend and participate in meetings and complete assigned follow-up
  • Perform regular and predictable work duties
  • Oversee cleaning and sanitizing of work and public spaces
  • Perform other duties as assigned
