The role of Chef & Food and Beverage (FB) Director at Crestline Hotels & Resorts is a vital leadership position, overseeing food preparation and service delivery across all food outlets within the hotel. This role blends culinary expertise with strategic operational management to ensure the highest standards of food quality, presentation, and guest satisfaction. Reporting directly to the General Manager, the Chef & FB Director plays a key part in driving the hotel’s financial success by managing daily operations of the restaurant and food and beverage departments including banquets. This salaried, exempt position carries an annual pay range of $95,000 to $105,000, dependent on experience. The Chef & FB Director’s responsibilities range from menu planning and food cost management to supervising kitchen and service staff, coordinating catering for group events, and maintaining compliance with food safety standards. This role demands a ‘‘hands-on’’ leadership approach during peak times, ensuring the seamless execution of meals and the effective training and scheduling of employees. Additionally, this leader communicates critical financial performance metrics to upper management and executes strategies to maximize profitability while upholding operational excellence.

The position involves multi-department collaboration to facilitate services agreed upon with clients and sales teams, ensuring smooth operations during conventions and special events. The Chef & FB Director actively participates in recruitment, inventory management to reduce losses, and promotional development to support business growth. Job Requirements

  • Minimum of 3 years supervisory experience in Food and Beverage Department
  • 5 or more years of progressive experience in Hotel Food and Beverage or successful F&B service industry
  • Culinary Degree with 3 or more years of progressive experience in Hotel Food and Beverage or successful F&B service industry
  • Ability to manage food cost and labor budgets effectively
  • Strong leadership and communication skills
  • Ability to work collaboratively with multiple departments
  • Commitment to maintaining high standards of food quality and safety

Job Qualifications

Job Duties

  • Creates and plans all meals and menus for the restaurant/outlets and catered events
  • Expedite peak meal periods by maintaining a 'hands on' approach
  • Works within monthly set food cost budget, adjust food requisitions and controls waste
  • Monitors food outlets, buffets, stations and food displays for creativity, quality, cleanliness and food safety
  • Assures timely set up, schedules well trained cooks in all areas in proper uniform
  • Assists the food and beverage services for conventions and group activities at the hotel and coordinates with other hotel-level departments
  • Works frequently with subordinates in the Food and Beverage department to ensure smooth business operations
  • Communicates financial information to the General Manager including budget and revenue growth programs
  • Achieves budgeted revenues, controls costs and maximizes profitability
  • Inspects restaurant and outlets daily to ensure high quality food and presentation, cleanliness and side work completion
  • Maintains follow-through on guest requests, problems, complaints and accidents
  • Assists in training Food and Beverage/Banquet personnel using effective training standards
  • Assists in scheduling employees and monitors labor costs for efficiency
  • Participates in monthly inventories and initiates programs to reduce breakage and loss
  • Assists in recruiting staff using company hiring standards
  • Conducts pre-shift meetings to prepare staff and ensure high standards
  • Assists in developing and implementing Food and Beverage promotional ideas
  • Provides a professional image through appearance and dress
