The Executive Chef role at Genuine Foods is a pivotal position based within a Higher Education facility, where you will have the responsibility of ensuring that students and families receive the quality, scratch-made meals they deserve. This role offers an exciting opportunity to work collaboratively with the culinary and operations management teams while managing the onsite staff. The Executive Chef will plan innovative and engaging menus while incorporating client preferences, nutritional considerations, and seasonal ingredients. Key responsibilities also include leading and coaching a team of cooks and food service staff, overseeing food preparation and service operations, and managing catering and event logistics. The Executive Chef plays a central role in maintaining high standards of food quality, sanitation, and customer satisfaction.

In addition to menu development and culinary creativity, the Executive Chef is involved in important operational tasks such as inventory management, ordering supplies, cost control, and ensuring efficient labor management. This role requires a strong focus on maintaining budgets through collaboration with regional directors, especially concerning food costs and labor expenses. Furthermore, the Executive Chef will ensure compliance with all food safety and sanitation regulations while striving for continuous improvement in all aspects of culinary operations. They will also oversee client visits and event services, communicate performance metrics such as meal participation rates and client feedback, and help to retain and develop the kitchen team.

Ideal candidates for this role have at least two years of experience in high-volume production, contract food service, healthcare, catering, hotel, or restaurant environments, preferably in an Executive Chef or Chef Manager position. The role demands adaptability to change and a passion for cooking, even when following recipes not personally created. Job Duties

  • Generate seasonal and exciting menus with the culinary team while considering client preferences and nutrition
  • Collaborate with Regional Director to ensure menus meet labor, food cost and efficiency standards
  • Manage all catering event operations including logistics, quality control, sanitation and food safety
  • Collaborate with Regional Director to ensure menu compliance with transportation requirements
  • Manage team member staffing, scheduling and coaching with HR assistance
  • Oversee menu development, costing, ordering and inventory management
  • Ensure availability of supplies and minimize waste
  • Maintain inventory records and invoicing
  • Comply with food safety and sanitation requirements
  • Manage and coach the team on daily food preparation, operational excellence and site cleanliness
  • Continuously improve culinary operations from sourcing to menu development and feedback
  • Oversee weekly P&L and communicate performance to teams
  • Perform any other assigned duties
