Job Description

Currently, Ruth's Chris Steak House is seeking an experienced Broiler Cook to join its dynamic kitchen team. This role is critical to maintaining the restaurant's high standards of food preparation and presentation, specifically focused on cooking and finishing steaks to perfection using high-temperature broilers. The Broiler Cook will work in a fast-paced, collaborative environment where attention to detail, precision, and a passion for quality are essential. The Broiler Cook's key responsibilities include mastering the art of cooking steaks ranging from rare to well-done, ensuring all dishes meet Ruth's Chris quality standards and plating guidelines, maintaining a clean and organized broiler station, and collaborating with other kitchen staff to guarantee timely service. Food safety and sanitation are paramount in this role, requiring adherence to all relevant standards to provide guests with safe, top-quality meals.

Ideal candidates will have over two years of experience working as a broiler or grill cook in a high-volume or fine dining kitchen setting. Extensive knowledge of steakhouse meat temperatures, doneness levels, and standards is necessary. The ability to remain calm and efficient under pressure in a hot kitchen environment is essential, along with strong attention to detail and a dedication to culinary excellence. Reliability, punctuality, and teamwork are also crucial traits for success in this position.

Additional skills and background that add value include experience in full-service restaurants, physical ability to lift and handle food and kitchen supplies weighing up to 100 pounds occasionally, stamina to stand and work effectively for extended periods, excellent communication skills to interact with supervisors and peers, and a refined palate for distinguishing flavors, spices, temperatures, and aromas in food and beverages.

Job Requirements

  • 2+ years of broiler or grill experience in a high-volume or fine dining kitchen
  • Excellent understanding of meat temperatures, doneness, and steakhouse standards
  • Ability to work calmly under pressure in a hot, fast-paced environment
  • Strong attention to detail and commitment to excellence
  • Reliable, punctual, and a true team player
  • Must be able to lift, handle, carry food, smallwares, equipment, supplies and paper goods at a minimum of 50 pounds constantly and up to 100 pounds occasionally
  • Must be able to constantly stand and exert well-paced mobility for a period up to four hours in length
  • Must be able to communicate effectively and listen attentively to supervisors, other employees, vendors, suppliers and other business representatives
  • Must be able to taste to distinguish between flavors, spices, temperatures, mouth feel and smell
  • Background check required

Job Duties

  • Masterfully cook and finish steaks to guest specifications (rare to well-done) using our high-temperature broilers
  • Ensure all food is prepared to Ruth’s Chris quality standards and plating guidelines
  • Maintain cleanliness and organization of the broiler station and kitchen line
  • Work collaboratively with kitchen staff to ensure timely, consistent service
  • Follow all food safety and sanitation standards
