The company is currently seeking an experienced and knowledgeable Subject Matter Expert (SME) in Brewing Process to join their team in San Antonio, Texas. This full-time role offers a competitive salary range from $124,500 to $199,000 annually, reflecting the level of expertise and leadership required. The SME will serve as the technical authority within brewing operations, providing guidance, innovation leadership, and strategic insight across various facets of the brewing process from raw material selection through to final conditioning. This position not only demands deep scientific and technical knowledge but also an ability to mentor and collaborate effectively with cross-functional teams including brewing, R&D, quality control, and production.

The SME in Brewing Process is responsible for driving improvements in product quality, process consistency, and operational efficiency while ensuring compliance with regulatory and safety standards. The role involves active participation in continuous improvement projects, including the implementation of new technologies and automation solutions to elevate the brewery's production capabilities. The SME will develop and update standard operating procedures and training programs to ensure best practices are embedded throughout the brewery.

An important aspect of the role is mentoring junior engineers and technical staff, fostering a culture of knowledge sharing and continuous professional development. The SME will conduct comprehensive root cause analyses of production issues, providing preventive strategies to mitigate future risks. Supporting new product development, the SME will contribute technical expertise in recipe formulation and process scale-up, ensuring innovation aligns with operational capacities. The position requires frequent engagement in client meetings, site visits, and inspections as part of ongoing quality assurance and technical advisory activities.

Employees in this role must be comfortable working in a brewery environment that involves physical activity such as lifting materials and exposure to heat, humidity, and noise. Job Requirements

  • Must be able to sit and/or stand for long periods of time, and work on a computer for extended periods
  • Valid driver’s license in the state employed, must have acceptable driving record, and must have automobile liability insurance (when using a personal vehicle on Company business) or have the ability to travel

  • Bachelor’s degree in Brewing Science, Fermentation Science, Food Science, Chemical Engineering, or related field
  • 12-15 years of experience in commercial brewing operations or process engineering
  • Recognized industry certifications

  • Ability to manage multiple projects and work cross-functionally
  • Strong leadership and mentoring capabilities
  • Willing to travel for extended periods of time

Job Qualifications

  • Bachelor’s degree in Brewing Science, Fermentation Science, Food Science, Chemical Engineering, or related field (Master’s or Ph.D. preferred)
  • 12-15 years of experience in commercial brewing operations or process engineering
  • Recognized industry certifications (e.g., Diploma in Brewing from the Institute of Brewing & Distilling) are a plus
  • Deep knowledge of brewing equipment, fermentation technology, and quality control methodologies
  • Experience with sensory analysis and flavor profiling
  • Familiarity with brewing software and process automation systems
  • Knowledge of environmental sustainability practices in brewing
  • Strong analytical and problem-solving skills

Job Duties

  • Serve as the technical authority on brewing processes including raw material selection, mashing, lautering, boiling, fermentation, and conditioning
  • Evaluate and optimize brewing procedures to improve product quality, yield, and operational efficiency
  • Collaborate with brewing, quality control, R&D, and production teams to troubleshoot process issues and implement corrective actions
  • Lead or contribute to continuous improvement projects, including new technology implementation and automation
  • Develop, review, and update standard operating procedures and training materials
  • Train and mentor staff on best practices in brewing science, equipment operation, and hygiene protocols
  • Conduct root cause analyses of production variances and implement preventive strategies
