The Back of House Trainee (BOH-T Entry Level Trainee) position at Genki Sushi USA, Inc. is designed for entry-level individuals eager to develop their skills in a fast-paced kitchen environment. This role operates under the close supervision of the Senior or Store Manager, ensuring the trainee receives clear instructions and hands-on experience across all essential kitchen duties. The primary purpose of this position is skill acquisition and career development, with assignments being routine and structured to build competence in all back-of-house stations within a 90-day probationary period. As an employee in this role, you will gain exposure to the complete operations of a sushi kitchen, including food preparation, sanitation, inventory management, and customer service standards.
During this period, the trainee will be trained to proficiently handle various stations such as prep cook, sushi cook, fry cook, and dishwasher, learning to maintain kitchen cleanliness, comply with health and safety regulations, and follow company recipes and standards rigorously. You will be expected to keep the kitchen organized and sanitized to the highest standards while helping to ensure the dining area is clean and that all customers receive excellent service, even under pressure or when addressing complaints professionally. You will actively participate in shift briefings and staff meetings to stay informed about operational changes and company expectations. Additionally, this role requires a flexible schedule, including nights, weekends, and holidays, typically with shifts lasting 4 to 6 hours and a minimum of 35 hours per week.
The successful candidate should be neat, organized, and possess basic knowledge of food and beverage service standards, including the ability to serve alcohol if applicable. Physical stamina is essential, as the role involves constant standing and walking, frequent bending and lifting up to 40 lbs, and operating various kitchen equipment such as fryers, rice washers, and sushi robots. Job Requirements
- Able to work at least 35 hours per week including nights, weekends, and holidays
- two of the three work availability times (day or night) must be weekend shifts
- basic knowledge of food and beverage, service standards, customer relations and etiquette
- able to serve alcohol if required (applicable to stores with liquor licenses)
- tuberculosis (TB) clearance by the Department of Health’s Food Handler guidelines (Hawaii only)
- appropriate state’s Food Handlers Card (Washington only)
- read, write, and speak English fluently
- ability to communicate clearly, both verbally and in written form
- neat, clean, and well-groomed appearance

Job Duties

- required to maintain kitchen cleanliness and organization consistently
- ensures proper sanitation of the entire kitchen area according to company standards
- works with management to ensure the cleanliness of the restaurant’s interior and exterior premises
- ensures that customers are consistently satisfied with their dining experience daily
- demonstrates and ensures that Genki Sushi USA, Inc.'s proper customer service standards are followed
- professional and calm while dealing with disgruntled customers and complaints
- notifies the store supervisor or manager of any customer complaint
- attends all pre/post-shift briefings and scheduled meetings
- complies with all updates, changes, and/or new material, policies, and/or procedures set forth by management
- learn and become competent in all duty stations

- able to efficiently run every station in the back of the house, including but not limited to the following: fryer, dishwasher, prep, maki, gunkan, nigari, and take-out
- ensures that all food is prepared correctly according to the company’s recipes, procedures, and standards
- ensures products delivered by the bullet express system consistently meet food product quality, presentation, and portion control
- properly rotates all food products using the FIFO method
- consistently maintains kitchen and center cleanliness, sanitation, and side work duties on time
- able to prepare and complete daily opening, mid, and closing duties as management assigns
- assist with properly storing and organizing timely deliveries of fresh and frozen items
- follows safe stock levels according to company standards
- communicate and report to the store supervisor or manager on all BOH operational issues and service concerns daily and/or immediately if necessary
- performs other assignments and duties as determined by the store supervisor or manager
- responsible for checking and working all scheduled shifts as posted
- notifies the store supervisor or manager of any personnel changes
- attends mandatory staff meetings
- adheres to all State OSHA, food, and sanitation requirements
