Job Description
The position of Back of House (BOH) Senior at Mensho Hawai'i / Genki Sushi USA restaurants represents an advanced-level opportunity within a well-established restaurant chain known for offering authentic and high-quality Japanese cuisine. The company is committed to maintaining exceptional culinary standards, consistent operational excellence, and providing outstanding customer service. The employment type is hourly and non-exempt, with work hours typically ranging between 6-8 hours per shift and a minimum of 30 hours per week. Shifts may vary depending on operational needs and require availability during nights, weekends, and holidays. This role is integral to the smooth operation of the kitchen, supporting the General Manager by demonstrating proficiency across all BOH stations and providing leadership to team members at various skill levels.
As a BOH Senior, you will be responsible for overseeing daily kitchen operations, ensuring all food preparation adheres to established recipes, portion controls, and quality standards. You will handle key stations including prep, noodle production, tare, soup, sushi, fryer, and dishwashing. This role demands a hands-on approach, guaranteeing that cleanliness, food safety, and equipment maintenance meet rigorous company and regulatory guidelines. The BOH Senior also supports scheduling, attendance tracking, inventory management, and product ordering aligned with cost of goods (COG) standards, helping to control both food and labor costs effectively. While the Senior provides essential leadership and operational support, final decision-making authority remains with the General Manager and Store Manager, particularly regarding hiring, disciplinary actions, and overall store management.
Key responsibilities include adherence to company policies and cleaning schedules, enforcement of sanitation and safety standards compliant with OSHA and food safety regulations, and hands-on participation in all cooking and preparation stations. The position also requires monitoring and maintaining kitchen workflow, equipment functionality, and temperature control of refrigeration units. Further operational duties include assisting with staff scheduling, supporting vendor orders, ensuring timely submission of invoices and orders, and promptly communicating operational or staffing issues to management. You will contribute to meetings and follow all safety regulations while supporting a clean and organized kitchen environment.
Ideal candidates possess strong organizational skills, the ability to lead by example in a fast-paced kitchen setting, comprehensive knowledge of BOH operations, and the capability to effectively train and mentor team members. Basic administrative and computer skills are necessary for tracking inventory and managing records. Physical demands include standing and walking for extended periods, bending, stooping, reaching, lifting up to 40 pounds, and operating diverse kitchen equipment. Job Requirements

- must thoroughly understand all BOH staff job requirements and be able to fully train according to company standards
- basic knowledge of food and beverage, service standards, customer relations and etiquette
- able to serve alcohol if applicable
- tuberculosis (TB) clearance by the Department of Health’s Food Handler guidelines (Hawaii only)
- appropriate state’s Food Handlers Card (Washington only)
- ServSafe Certification (if required)
- read, write, and speak English fluently
- ability to communicate clearly, both verbally and in written form
- computer knowledge, Windows, etc.
- minimum 6-12 months of work experience at a Mensho Hawai'i / Genki Sushi USA restaurant and ability to perform BOH staff duties with little or no supervision
- minimum one year of work experience in a restaurant or related industry with at least one year in a supervisory capacity desired

Job Duties
- Comply with all company policies, procedures, and updates
- adhere to daily, weekly, and monthly BOH cleaning schedules

- perform all BOH station functions including prep team/noodle producer, tare station, soup/noodle station, topping station, sushi station, fryer station, dishwasher
- efficiently run and support all BOH stations as needed
- ensure all food is prepared according to company recipes, standards, and projected volume
- maintain consistency in food quality, presentation, and portion control
- follow FIFO for proper food rotation
- maintain safe stock levels and proper storage practices
- assist with receiving, organizing, and storing deliveries (fresh and frozen)
- monitor kitchen equipment and ensure proper functionality
- ensure all refrigeration and freezer temperatures meet safety regulations
- assist with BOH staff scheduling and shift coverage
- complete opening, mid-shift, and closing duties as assigned
- support inventory tracking and vendor ordering processes
- ensure accurate and timely submission of orders and invoices
- report BOH staff issues, operational concerns, and service problems to the GM promptly
- support management in controlling COG % and labor costs
- collect and submit invoices daily
- work all scheduled shifts reliably
- attend required meetings (bi-weekly supervisor and monthly staff meetings)
