Job Requirements

  • Ability to communicate effectively with guests, team members and management in both written and verbal form
  • high school diploma or equivalent
  • two years culinary experience in a related field preferred
  • must be at least 21 years of age
  • demonstrate competence in the fundamentals of cooking and professional terminology
  • demonstrated ability to develop culinary and beverage products in a high-volume environment
  • must possess analytical, problem-solving and critical thinking skills
  • comprehensive food knowledge including basic knowledge of profit and loss statements, cost control, menu planning, budgeting, training, inventory control and sanitation
  • must possess ability to work hands-on in kitchen environments related to three-meal periods and high-volume production including fine dining, butchering, baking, soups, stocks, sauces, roasting, sautéing, broiling, grilling and cold food production
  • ability to handle a flexible schedule and work weekends, holidays and shifts
  • ability to delegate, empower and evaluate team members with minimal supervision
  • ability to work in fast-paced environments
  • must be able to obtain a gaming license from the Graton Gaming Commission
  • must possess or obtain a California Food Handler Certification
  • requires manual dexterity to operate job-related equipment
  • must be capable of lifting 50 pounds, push 150-250 pound pushcart, in/out of walk-ins of -10 degrees to 140 degrees with or without assistance
  • requires physical ability to stand for long periods, walk frequently, bend or reach to a height of six feet
  • requires normal sense of smell, taste and touch

Job Duties

  • Redefine hospitality at Graton Resort and Casino while promoting company values
  • assist in creative development of new menu items and maintain a continuous pipeline of culinary concepts
  • explore and integrate new culinary techniques and presentations inspired by industry trends and international cuisine
  • supervise restaurant production kitchens focusing on team member training, mentorship, and menu development
  • plan and create menu items for core, large party group menus, and VIP secret menus
  • collaborate with the Graton farm team to incorporate harvested produce into the menu
  • conduct daily audits and vendor reviews to ensure product quality
  • enforce health, safety, and sanitation standards including monthly health inspections
  • assist line cooks with meal preparation and planning
  • monitor and record inventory, placing orders as needed
  • conduct month-end inventory of food and beverages
  • foster a cooperative working climate to maximize productivity and team morale
  • maintain quality control of products, equipment, and services ensuring consistent service and presentation standards
  • ensure kitchens and equipment comply with health and safety regulations
  • address team member and guest opportunities effectively
  • evaluate and oversee team member performance, coaching and counseling as necessary
  • schedule staff and manage labor hours for optimal staffing
  • conduct ongoing group and individual training
  • lead daily team huddles and maintain communication
  • manage team member records including time attendance and disciplinary actions
  • participate in budget creation and financial forecasting to meet operational goals
