Hilton Milwaukee's Chophouse is an upscale dining establishment situated within the premier Hilton Milwaukee hotel, the largest hotel in Milwaukee connected to the newly expanded Baird Center. The Chophouse Bartender role is a pivotal position within this luxurious setting, responsible for enhancing the guest experience by delivering exceptional food and beverage service in a fine-dining atmosphere. This role combines a passion for hospitality with expert knowledge of the beverage industry, particularly in wine, spirits, and beer. Successful candidates will expertly prepare drinks, adhere to all state, federal, and corporate liquor regulations, and maintain a clean and well-stocked bar. Duties include greeting guests warmly, managing POS systems and bar inventory, handling cash transactions accurately, and assisting in various tasks such as disorderly guest management and occasional serving duties in the bar area. The role demands both physical stamina, such as the ability to carry large trays up to 35 lbs and stand for extended periods, and sharp manual dexterity to handle glassware, bottles, and prepare garnishes.

Ideal candidates bring at least two years of bartending experience in a fine dining environment and hold relevant certifications such as a bartending certificate and TIPS certification. Strong communication skills and a deep knowledge of beverages—including vintages, regions, and liquor levels—are essential for creating a premium guest experience. The position requires working primarily on Fridays and Saturdays, supporting a dynamic and high-energy atmosphere.

Job Requirements

  • ability to obtain any government required license or certificate
  • able to carry large trays up to 35 lbs with one hand and stand or work in confined spaces for long periods

Job Qualifications

  • At least two years of bartending or bar service experience in a fine dining outlet
  • bartending certificate required

  • high level of knowledge of wine spirits and beer
  • ability to recite vintages regions and multiple levels of liquor
  • proficient in English for guest communication and order taking
  • basic writing skills for requisitions balance sheets and vouchers
  • basic math skills for cash register operations making change totaling checks and understanding portion sizes
  • manual dexterity for garnishes handling glassware and bottles scooping ice mixing drinks and retrieving stock

Job Duties

  • Set up and stock the bar daily including beer wine spirits paper products straws stirrers condiments and produce
  • maintain stock cut and store fresh garnishes juices and perishables to ensure quality
  • greet guests take drink orders mix garnish and present drinks using standard recipes and portion control
  • understand drink menu wine list ingredients preparation and service
  • efficiently use POS and manage bar inventory
  • handle cash transactions verify charges and process guest checks
  • perform general cleaning tasks using standard products to meet health standards and maintain glassware
  • adhere to all State Federal and Corporate liquor regulations pertaining to serving alcoholic beverages to minors and intoxicated guests
  • assist security with disorderly guests and act as a server when guests want to be served in the bar area
