Job Description
The Daniel Island Club is an exclusive private country club located on Daniel Island, just minutes from Downtown Charleston and Mount Pleasant. This prestigious establishment offers its members a luxurious and comprehensive recreational experience featuring thirty-six holes of championship golf, as well as state-of-the-art tennis and fitness centers. Renowned for its exceptional facilities and stunning views of Charleston's marshlands, the club stands out as a premier destination for both leisure and social events. The Daniel Island Club's culinary brigade plays a pivotal role in maintaining the high standards the club is known for, with a thriving banquet department serving a variety of events in a 300-seat ballroom overlooking beautiful marshlands. The Banquet Sous Chef position is critical to support this vibrant aspect of the club. The role involves assisting in overseeing banquet operations across multiple dining concepts, including a 120-seat fine dining restaurant featuring a chef-driven raw bar, prime steaks, seafood, and a modern southern-inspired menu, as well as a 200-seat upscale casual dining venue that offers a modern coastal southern ambiance for lunch and dinner. Additionally, the club operates an outdoor private club cabana featuring poolside dining for over 300 guests and a 100-plus-seat cabana bar.
As a Banquet Sous Chef, you will play an essential leadership role within the banquet kitchen department, ensuring the flawless execution of a wide range of member and private events such as golf tournaments, corporate functions, social gatherings, and large parties. This position requires close collaboration with the Executive Chef, Banquet Manager, and Sales department to meticulously plan, organize, and execute banquet events that meet the club's high culinary and service standards. You will be responsible for overseeing food preparation, maintaining quality control, and ensuring all banquet details conform to the club's exacting standards.
The ideal candidate will bring a minimum of three years experience in luxury catering or high-volume banquet production, with at least one to two years in a managerial role. Leadership, attention to detail, and creativity are paramount in this role, along with proficiency in computer programs such as Microsoft Word, Excel, and Outlook, as well as club operating software. You will be expected to coordinate banquet production and plating with key culinary team members, manage food inventory and cost controls, maintain up-to-date recipes, and ensure compliance with all food safety and sanitation standards.
This position demands strong communication skills to provide clear direction to kitchen staff, the ability to mentor and develop team members, and the flexibility to perform other duties as assigned by management. Due to the nature of the role, it may require standing for extended periods and working nights, weekends, and holidays. Job Requirements
- Minimum of 3 years experience in luxury catering and/or high-volume banquet production
