The position of Banquet Cook at The Ritz-Carlton is a critical role within the culinary team, responsible for the preparation and presentation of high-quality banquet foods that meet the luxurious standards of the brand. This role involves determining food presentation based on banquet event orders (BEOs), creating decorative food displays, and preparing special meals or substitute items as needed. The Banquet Cook supports banquet operations by assisting with plate-ups, setting up action stations, carving buffet meats upon guest requests, and maintaining adequate stock levels for banquets and buffets.
This role requires expertise in operating various cooking appliances such as ovens, stoves, grills, microwaves, and fryers, as well as skill in prepping ingredients accurately, including portioning, chopping, and storing food appropriately. Quality control is paramount, with the Banquet Cook monitoring food quantity, quality, portion size, garnishing, and presentation to ensure the highest standards are met consistently.
Additionally, the Banquet Cook supports management by contributing to employee hiring, training, scheduling, counseling, evaluating, and motivating team members, fostering an environment of teamwork and professional growth. Safety and security policies are strictly followed, with prompt reporting of maintenance issues, accidents, or unsafe conditions to management. Personal appearance and uniform standards are maintained to ensure professionalism, and physical activity requirements include the ability to move and lift items up to 50 pounds, as well as standing and walking for extended periods.

Job Requirements
- Technical, trade, or vocational school degree
- minimum 3 years related work experience
- no supervisory experience required
- no licenses or certifications required
- ability to stand, sit, or walk for extended periods
- ability to lift, carry, push, pull, or place objects up to 50 pounds
- willingness to follow company safety policies
- good communication and teamwork skills
- availability to perform other duties as assigned

Job Duties
- Determine food presentation according to the banquet event order

- ensure proper portion, arrangement, and food garnish
- monitor quality and quantity of prepared and served food
- prepare proper plate and platter presentations for banquets

- support banquet and buffet by ensuring adequate stock of all items

- prepare cold foods
- assist management in hiring, training, scheduling, evaluating, counseling, disciplining, motivating, and coaching employees
- follow all company safety and security policies and procedures
- report maintenance needs, accidents, injuries, and unsafe work conditions to managers
- complete safety training and certifications
