Beyond culinary proficiency, this role requires robust cost control acumen, including management of food and labor costs, efficient scheduling aligned to business demand, and accurate ordering practices. Job Duties
- Collaborate with the Executive Chef and other departments such as catering, sales, and customer service
- Lead and manage the banquet kitchen operations to deliver high-quality food for events generating over 4 million in revenue
- Plan menus including garde manger, savory dishes, and pastry elements
- Prepare detailed prep lists and execution plans for multiple concurrent events
- Monitor and control food costs and labor costs to maintain budgetary compliance
- Schedule kitchen staff efficiently based on business needs
- Order supplies and ingredients appropriately to support event demands
