Job Requirements

  • Collaborative leadership skills
  • Experience in a professional banquet kitchen with significant revenue responsibility
  • Knowledge of garde manger, savory, and some pastry preparation
  • Ability to plan and follow through multiple event executions
  • Strong organizational and communication skills
  • Skills in cost monitoring and controlling food and labor expenses
  • Ability to schedule and order supplies efficiently
  • Culinary degree preferred but not required

Job Qualifications

  • Culinary degree preferred
  • Proven leadership experience in banquet kitchen management in high-end hotels or resorts
  • Strong skills in garde manger, savory dishes, and pastry
  • Ability to plan and execute multiple events simultaneously
  • Excellent organizational and communication skills
  • Experience with menu planning and cost control
  • Familiarity with birchstreet inventory and ordering is a plus
  • Offsite catering experience advantageous
  • Experience with cooking demonstrations or classes and media communication is beneficial

Job Duties

  • Collaborate with the Executive Chef and other departments such as catering, sales, and customer service
  • Lead and manage the banquet kitchen operations to deliver high-quality food for events generating over 4 million in revenue
  • Plan menus including garde manger, savory dishes, and pastry elements
  • Prepare detailed prep lists and execution plans for multiple concurrent events
  • Monitor and control food costs and labor costs to maintain budgetary compliance
  • Schedule kitchen staff efficiently based on business needs
  • Order supplies and ingredients appropriately to support event demands
