The role of Assistant Head Baker at Ginger and Baker is a pivotal management position within the bakery operations, working closely with the Bakery Production Manager to oversee all aspects of bakery production. This hands-on role involves direct participation in hiring, staffing, training, scheduling, appraising, and managing bakery employees to ensure smooth operations and high-quality output. The Assistant Head Baker also plays a key role in maintaining product consistency by demonstrating techniques and ensuring adherence to recipes. Collaboration with the Coffee Shop and restaurant chefs is essential for planning daily production and maintaining an adequate supply of bakery products across the establishment. Additionally, this position demands strong labor cost management skills and the ability to meet performance and production goals. The Assistant Head Baker must be knowledgeable about various baking techniques including doughs, pies, cookies, lamination, custards, meringues, and bread baking, while maintaining a safe, clean, and organized work environment. This role requires flexibility in scheduling, including days, nights, weekends, and holidays, reflecting the dynamic nature of the hospitality industry. Job Requirements
- High school diploma or equivalent
- Minimum of 3 years experience in professional bakery or culinary environment
- Proven track record of managing kitchen staff and operations efficiently
- Experience preparing a variety of baked goods pastries and desserts
- Strong knowledge of baking techniques and pastry arts
- Ability to follow and develop recipes accurately
- Excellent organizational and time management skills
- Ability to work in a fast paced environment and handle multiple tasks simultaneously
- Strong leadership skills with ability to train and motivate kitchen staff
- Attention to detail and commitment to maintaining high quality standards
- Excellent communication skills and ability to work collaboratively with team members
- Must have ServSafe or county required certifications
- Pass certification within 90 days of employment
- Flexible schedule including days nights weekends and holidays
Job Qualifications

Job Duties
- Interview hire train schedule coach appraise and terminate bakery staff as required
- Manage shifts and staff including daily decision making service quality production quality and cleanliness
- Demonstrate and teach bakery techniques and recipe adherence daily
- Adjust schedules based on business volume budget and staff skills
- Direct production of consistent quality bakery products according to recipes and timelines
- Maintain safe clean organized work environment and manage inventory and ordering pars
- Communicate clearly with team and coordinate with other departments for effective production planning
