The role of Assistant Bakery Manager at Swamp Rabbit Cafe and Grocery is an exciting opportunity for someone passionate about baking, local food, and team leadership. This position is responsible for managing the daily operations of the bakery, including overseeing production efforts, training staff, and ensuring that all bakery products meet high-quality standards. This role sets the production pace on shifts, models efficiency, and uses sales data to optimize workflows and minimize losses. The role requires keen attention to detail with quality checks on all outgoing products, seasonal menu development emphasizing sustainable and organic ingredients sourced locally, and hands-on operation of commercial-grade bakery equipment. Job Requirements
- Must be 21 years of age or older
- Five plus years kitchen management experience
- Available early morning and weekends
- Must have passion for local food and interest in telling the story behind it
- Honest, professional, and respectful conduct

Job Duties
- Work with Bakery Manager to develop and implement production and quality goals and standards relating to the Bakery
- Set the pace in the Bakery each shift by producing a high volume of product
- Model efficiency in all tasks and train team on pace and time management
- Create daily and weekly workflows and prep/production lists aligned to sales forecasts and data to promote minimized loss and optimized sales
- Perform visual quality checks of all products going out for sale
- Taste products as needed to ensure quality
- Lead with an approachable positive personality to influence a fun and exciting work environment and customer experience
- Assist with the development of menus based on seasonally available ingredients, prioritizing sustainable and organic, sourced from local farms
- Operate a variety of specialized foodservice equipment including large scale commercial equipment
