The Baker position at Dexterra is a pivotal role within the workforce accommodations facility, responsible for managing the entire bakery operation. This role demands hands-on production leadership, ensuring the consistent quality and safety of baked goods. Initially tasked with supporting approximately 500 guests daily, the operation is expected to scale rapidly to serve over 4,000 guests per day. As such, the Baker must maintain product consistency, availability, and safety while adapting to a growing, dynamic environment.

Reporting to the Executive Chef or their delegate, the Baker is accountable for overseeing baking production, enforcing quality control, and ensuring food safety compliance. The Baker also supervises the night-shift bakery staff, providing mentorship, guidance, and on-the-job training to maintain high standards in production and operational efficiency. The position requires the ability to thoroughly understand and implement scratch baking techniques and large-batch production methods.

In addition, the Baker plays a critical role in developing bakery and dessert menus aligned with client expectations and production efficiencies. Maintaining pastry and bakery shelf inventory to ensure fresh, visually appealing, and sufficient baked goods is essential. The Baker is also responsible for supporting special dietary needs by preparing allergen-aware and modified recipes as necessary.

The role calls for continual evaluation and improvement of bakery operations and food service execution, ensuring compliance with all relevant food safety regulations and standards, including the Food Safety Act, FOODSAFE, and HACCP principles. Cleanliness and hygiene are paramount, requiring regular cleaning, washing, and sanitizing of equipment and work areas. The Baker must monitor product rotation, labeling, and storage to uphold freshness and safety.

Collaboration with culinary leadership ensures bakery output aligns with fluctuating service volumes and guest demand, thereby maintaining the seamless supply of baked goods for diverse and large populations. Job Requirements

  • Culinary education or designation with specialty in baking
  • food safety certification

  • physically able to stand for extended periods and lift up to 35 pounds
  • strong attention to detail organization and cleanliness

Job Duties

  • Full responsibility for daily bakery and pastry production including bread desserts and baked goods prepared both par baked and from scratch ingredients
  • supervising night-shift employees providing mentorship guidance and on-the-job training
  • preparing and baking goods from scratch in accordance with approved recipes and menus
  • creating and following bakery and dessert menus to ensure quality consistency and production efficiency
  • restocking pastry and bakery shelves to maintain a sufficient fresh and visually appealing supply of baked goods
  • ensuring baked goods meet client quality standards and contractual requirements
  • supporting special dietary needs including allergen-aware and modified recipes as required
