The Back of House Kitchen Manager role is a pivotal leadership position within the City Winery team, tasked with orchestrating the culinary operations to maintain the highest standards of food quality, presentation, and safety. Reporting to senior management and working closely with the executive chef, this role oversees kitchen production, schedules and supervises multiple shifts, and ensures compliance with health, safety, and regulatory standards. The kitchen manager is a hands-on leader, responsible for cultivating a work environment founded on mutual trust, respect, and professionalism. This individual actively engages in culinary innovation, budget management, staffing, purchasing, inventory control, and interdepartmental collaboration to achieve company goals.

Job Requirements

  • Minimum 3 years experience in overall kitchen leadership roles
  • Culinary school graduation or equivalent training preferred
  • Functional knowledge of health and safety regulations
  • Ability to multitask and manage projects in fast-paced settings
  • Demonstrated decision-making skills with attention to detail
  • Ability to meet budgets for labor and food costs
  • Experience training and developing kitchen staff
  • Strong collaboration and communication skills
  • Proficient computer skills
  • Valid Serve Safe certification
  • Ability to commute and travel for meetings and events
  • Ability to perform physical requirements including standing, walking, lifting up to 50 lbs
  • Willingness to work flexible schedules including nights, weekends, holidays

Job Qualifications

  • Minimum 3 years experience in kitchen leadership roles in high volume environments
  • Culinary school graduate or related training preferred
  • Functional knowledge of Health Department and OSHA regulations
  • Strong multitasking and delegation abilities
  • Proven decision-making and problem-solving skills
  • Experience managing budgets including labor and food costs
  • Excellent interpersonal and communication skills
  • Proficient in computer and technology use
  • Serve Safe food handler’s certification
  • Ability to work flexible schedules including nights, weekends, and holidays

Job Duties

  • Oversee all kitchen production areas and coordinate activities across multiple shifts
  • Manage and supervise kitchen staff, delegate responsibilities, and maintain accountability
  • Ensure adherence to City Winery's food quality, culture, and service standards
  • Monitor kitchen operations for quality, consistency, and productivity
  • Train kitchen staff in food storage, preparation, cooking, garnishing, and presentation
  • Maintain sanitation, cleanliness, and safety standards in compliance with health regulations
  • Collaborate with internal teams to support culinary elements of specialty events
  • Manage labor and food costs to meet budgetary goals
  • Conduct performance evaluations and participate in staff coaching and disciplinary actions
  • Develop and implement kitchen training programs and food preparation methodologies
