The Assistant Bakery Operations Manager (ABOM) role at Insomnia Cookies is a critical leadership pipeline position based in the Gainesville, FL store located at 1702 W University Ave Suite B1. This role is designed to develop the next generation of Bakery Operations Managers by combining hands-on bakery operational responsibilities with talent development, administrative ownership, and team leadership. The ABOM is expected to operate at near-BOM level, executing bakery operations with urgency, accuracy, and accountability while building the skills necessary to independently run a bakery.

An ABOM acts as a true extension of the Bakery Operations Manager (BOM) and must be prepared to assume full bakery ownership when necessary. The role entails ensuring strict adherence to product quality, cleanliness, food safety, and guest experience standards, while also managing inventory, scheduling, staffing, and administrative tasks. ABOMs play an instrumental role in talent acquisition and development, supporting recruiting, interviewing, onboarding, and training new team members. They provide consistent coaching and performance feedback, upholding a culture of accountability and growth mindset throughout the bakery team.

In addition to executing daily operational tasks, ABOMs partner with BOM and Area leadership to identify gaps and implement solutions that drive bakery performance. The ability to manage bakery operations independently during the absence of the BOM is a hallmark of success in this role. Job Duties

  • Execute all core bakery operations including inventory rotation, scheduling support, staffing coordination, and administrative checklists
  • Maintain strict adherence to product quality, cleanliness, food safety, and guest experience standards
  • Support ordering, inventory accuracy, and shrink control
  • Assist in schedule creation and labor execution to meet operational targets
  • Support recruiting, interviewing, onboarding, and training of new staff
  • Deliver consistent coaching and real-time performance feedback
  • Hold team members accountable to standards while reinforcing a growth mindset culture
  • Ensure onboarding and training programs are executed to company standards
  • Manage bakery operations independently in the absence of the BOM
  • Model urgency, accountability, and operational discipline
  • Partner with BOM and Area leadership to identify operational gaps and implement solutions
  • Maintain continuity of operations during leadership transitions or staffing shortages
  • Perform other duties as assigned
