The role of the Assistant Retail Baker at Gateaux Bakery is designed for a skilled individual passionate about pastry arts and eager to contribute to the bakery's daily operations. This position involves managing baked items in their second phase of creation, including torting, filling, icing, and storage. The Assistant Retail Baker works closely with the Retail Baker to coordinate and execute the daily and weekly task list, ensuring all items meet the high standards of quality and presentation Gateaux is known for. Responsibilities extend beyond basic baking tasks to include light baking, garnish duties, sanitation, customer service support, and inventory assistance. This full-time role is Monday through Saturday, with Sundays and Mondays off, offering a consistent schedule and a competitive hourly wage of $20. The position demands not only technical baking skills but also an ability to maintain a clean, organized, and compliant workspace in accordance with food safety standards. Physical stamina is important due to the standing nature of the job and the need to lift ingredients up to 50 pounds. Job Requirements

  • Basic baking knowledge including mixing and baking techniques
  • Minimum 1-2 years experience in commercial baking
  • Ability to stand for extended periods
  • Capability to lift up to 50 lbs
  • ServSafe certified
  • Comfortable operating commercial baking machinery
  • Willingness to perform sanitation duties
  • Availability to work Tuesday through Saturday from 6am to 2:30pm
  • Commitment to maintaining cleanliness and food safety standards

Job Qualifications

  • High school diploma or equivalent preferred
  • 1-2 years experience in a commercial baking kitchen
  • Baking and pastry arts diploma preferred but not required
  • ServSafe certification
  • Capable of operating commercial baking equipment and machinery
  • Basic understanding of mixing and baking methods
  • Basic knowledge of dough and batter preparation including cookies, brownies, and pate choux
  • Familiarity with cake torting and filling techniques
  • Strong attention to detail
  • Good organizational skills
  • Ability to follow food safety and sanitation standards

Job Duties

  • Assist the retail baker in progressing baked items from baking phase to prep phase
  • Perform light baking and garnish duties
  • Conduct light sanitation tasks
  • Provide light customer service assistance
  • Count and box pastries for seasonal contract accounts
  • Cut and wrap bars and breads
  • Torte, fill, and crumb coat various cakes
  • Prep and build petit four bases
  • Roll and dip cookies
  • Bake, glaze, and garnish breakfast pastries
  • Prepare, fill, and dip eclairs
  • Prepare and garnish fresh fruit items
  • Wash, rinse, and sanitize cake pans, mixing bowls, and smallware
  • Assist in completing daily task list
  • Maintain a clean and sanitized workspace compliant with food safety and health regulations
  • Assist with ordering and receiving supplies
