Job Requirements
- High school diploma or equivalent
- Previous experience in restaurant management
- Must have or obtain unexpired Food Handlers and TABC certifications
- Ability to work flexible hours including nights, weekends, and holidays
- Physical ability to stand and walk for an entire shift
- Ability to lift, move, and carry moderate weight
- Willingness to work in various areas of the resort including interior hotel, dining room, and kitchen
- Comply with all health and safety regulations
Job Qualifications
- Previous restaurant manager experience required
- Flexible schedule including evenings, weekends, and holidays
- Understanding of financial statements and labor productivity
- Hold unexpired Food Handlers and TABC certifications or obtain upon hire
- Ability to stand and walk for extended periods
- Capable of moving, lifting, carrying, pushing, and pulling moderate weight without assistance
- Experience working in hotel dining rooms and restaurant kitchens
- Familiarity with cleaning chemicals, food items, and beverages
Job Duties
- Ensure maximum guest satisfaction while dining in the restaurant
- Conduct daily pre-meal meetings with service staff
- Supervise floor operations during service
- Ensure service personnel follow service protocol including steps of service
- Handle all guest complaints to satisfaction
- Make weekly staff schedules
- Ensure kitchen, stewarding, and cashier staff are on duty as scheduled
- Ensure side-stations are fully stocked with equipment
- Check proper functioning of beverage machines
- Ensure rotation in seating assignments
- Assist in seating or service of guests as necessary
- Monitor staff productivity
- Monitor food quality and consistency
- Post accurate special boards and descriptions
- Recognize and acknowledge repeat guests
- Review daily reservations and check VIP lists
- Handle all special attention details
- Maintain cleanliness and atmosphere of restaurant
- Ensure staff uniforms and appearances meet standards
- Inspect tabletops, side-stations, and tray stands during service
- Ensure all equipment is in good condition and clean
- Adjust lights and music appropriately for meal periods
- Perform up-selling techniques with staff
- Be familiar with beverage procedures and assist cashier when needed
- Adhere to company policies and procedures
- Know and enforce liquor liability laws
- Perform additional duties as assigned by management
