The Manager in Training (MIT) role at Pollo Nation is an exciting opportunity for individuals eager to advance their careers in the restaurant management field. This position is designed to develop future leaders by immersing them in comprehensive, hands-on experience across daily restaurant operations. MITs will receive in-depth training and mentorship from seasoned leaders including the Training General Manager and Field Training Manager to gain skills in key areas like food safety, guest service, labor management, and team leadership. This role requires managing a team of 25 or more employees and involves responsibilities that span coaching, scheduling, inventory, payroll, and operational compliance. The MIT will learn how to cultivate a high-performing team culture while maintaining the highest standards of food quality, safety, and cleanliness.
Throughout the training period, MITs will conduct daily pre-shift meetings to align team goals and service expectations, address guest concerns promptly, and drive financial performance through diligent labor management and operational efficiency. Candidates for this role should expect to engage deeply in hiring, onboarding, and developing both hourly staff and future leaders, all within a supportive, fast-paced restaurant environment. Job Duties
- Oversee day-to-day restaurant operations, ensuring food quality, safety, cleanliness, and consistent service and presentation
- Support a high-performing team culture through ongoing coaching, engagement, and accountability
- Model and coach hourly team members and managers in delivering exceptional guest service and addressing guest concerns with urgency and care
- Supervise and assist in leading a team of 25+ employees, ensuring adherence to company and regulatory standards
- Conduct daily pre-shift meetings (huddles) to align teams on goals, service standards, and operational updates
- Assist in scheduling, inventory, ordering, payroll, fund handling, and reconciliation processes
- Participate in hiring, onboarding, training, and developing both hourly team members and future leaders
