The Manager in Training (MIT) role at Pollo Nation is a strategic position designed to prepare individuals for future leadership responsibilities by immersing them in all facets of restaurant operations. This role offers comprehensive, hands-on experience to develop skills necessary to manage daily operations, including overseeing food safety procedures, guest service excellence, labor management, and team leadership. The MIT works closely with the Training General Manager, Field Training Manager, and leadership team to develop the ability to cultivate a high-performance culture within the restaurant setting.

The position involves managing and supporting a team of up to 25 employees, ensuring that the restaurant maintains operational excellence and aligns with company standards and regulatory requirements. Through daily engagement and coaching, the MIT supports team members in delivering outstanding customer service and fosters an environment of accountability and continuous improvement. This role also involves critical operational tasks such as scheduling, inventory management, payroll processing, and ensuring proper adherence to safety and cleanliness standards.

Candidates in this role are expected to actively participate in hiring, onboarding, and training team members and future leaders, contributing to the overall growth and success of the restaurant.
