The role of Assistant Kitchen Manager is an essential position within the restaurant's management team. This role involves assisting the Kitchen Manager in all kitchen operations, including food purchasing, receiving, preparation, and maintaining quality standards. The Assistant Kitchen Manager plays a critical part in ensuring the kitchen runs smoothly by supporting the control of food costs, ensuring all food is prepared to the highest standards, and maintaining safety and sanitation protocols. Job Requirements

  • high school diploma or equivalent
  • prior experience working in a kitchen environment
  • familiarity with food preparation techniques and restaurant operations

  • physical ability to stand for extended periods and lift heavy items

Job Qualifications

  • experience in kitchen management or a similar role
  • knowledge of food safety and sanitation standards

  • ability to train and develop kitchen staff

Job Duties

  • ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards
  • responsible for ordering food products according to predetermined product specifications and received in correct unit count and condition and deliveries are received in accordance with the restaurant’s receiving policies and procedures
  • assisting the Kitchen Manager in controlling food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes and waste control procedures including checking and maintaining proper food holding and refrigeration temperature control points
  • fill in where needed to ensure guest service standards and efficient operations
  • ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs
