The position of Assistant Executive Kitchen Manager (AEKM) at Din Tai Fung North America offers an exciting leadership role within a fast-paced and dynamic kitchen environment. This role entails supporting the day-to-day operations of the kitchen to ensure food safety, adherence to brand standards, and operational excellence. The AEKM collaborates closely with the Executive Kitchen Manager (EKM) and other team leaders to manage workforce scheduling, recruitment, team development, and training. With an annual base salary range between $121,700 and $152,100 plus eligibility for an annual incentive plan, this role provides competitive compensation reflecting the skills and experience required.

In this leadership capacity, the Assistant Executive Kitchen Manager is responsible for managing scheduling accuracy, validating workforce management tasks, and submitting personnel transactions such as promotions and demotions. The role also involves active participation in hiring processes including conducting interviews and making final hiring decisions for back-of-house staff. The AEKM ensures the kitchen team remains trained on evolving procedures and certifications for key culinary stations, promotes brand integrity, and enforces food safety regulations in alignment with health department protocols and company policies.

This position demands strong financial acumen and a high level of understanding of inventory management, ordering procedures, and cost control measures. The AEKM monitors par levels, supports implementation of cost of goods sold (COG) and key performance indicator (KPI) action plans, and maintains open communication lines to coach and update team members on various operational initiatives. The role requires physical stamina to stand for extended periods, lift up to 50 pounds, and work in environments ranging from refrigerated to hot kitchen conditions.

Job Requirements

  • High school diploma or equivalent
  • 2+ years restaurant management experience in casual or upscale casual dining
  • strong financial acumen
  • high level understanding of inventory and ordering processes

  • temperature - ranges from refrigeration temp to hot line temps
  • applicant must be 18 years of age or older

Job Qualifications

Job Duties

  • Validate scheduling for EKM review
  • submit people transactions such as promotions and demotions
  • participate in investigations in partnership with HR
  • coach and document performance and corrective actions and the development of managers
  • conduct interviews and make final hiring decisions for non-exempt BOH staff
  • assist with the hiring process for managerial roles
  • work with managers on Zenput task lists and ensure operational needs are met including accurate ordering, par levels, and inventory management
  • teach, coach, and maintain brand standards while ensuring the team is updated on new rollouts, promotions, and changes
  • collaborate with EKM to create staffing and planning needs for BOH
  • assist in implementing COG and KPI action plans
  • train and coach the team on food safety, maintain compliance with health department protocols, and implement and follow up on the Ecosure Action Plan
  • prepare and review manager meeting decks for EKM
  • follow up on facilities needs
  • ensure overall food safety and quality standards are met
  • ensure the team is certified and up to date with training on key stations including Wok, Noodle, and Prep
