The AM Cook role at Thompson Dallas is a vital position within the culinary team, focused primarily on breakfast and brunch service from 6:00 AM to 2:00 PM. This position is ideal for a culinary professional who enjoys working in a fast-paced luxury hotel environment and takes pride in delivering high-quality food that meets stringent presentation and taste standards. The candidate will be responsible for preparing and executing breakfast and brunch menu items according to the Chef team's standards, which require thorough knowledge of cooking times, temperatures, and plating techniques. The AM Cook will also maintain mise en place, ensure proper station setup and breakdown, and support the overall cleanliness and safety of the kitchen workspace.
In addition to restaurant operations, the AM Cook may support banquet and event culinary efforts as business needs fluctuate. This requires flexibility and the ability to adapt to different culinary demands while maintaining a high level of professionalism, teamwork, and communication. The role demands schedule flexibility including availability on weekends and holidays to meet the operational needs of the hotel. The ideal candidate will bring at least two years of breakfast cooking experience and have the capability to thrive under pressure while balancing multiple tasks efficiently. Job Requirements
- Minimum 2 years of breakfast cooking experience required
- Must be comfortable working in a fast-paced kitchen environment
- Schedule flexibility required
- Must be available to work weekends and holidays
- Ability to stand and walk for extended periods throughout the shift
- Ability to lift, push, pull, and carry up to 50 pounds safely and independently
- Ability to frequently bend, stoop, kneel, and reach throughout service
- Ability to work in a hot, wet, and loud kitchen environment
- Ability to safely operate kitchen equipment including ovens, grills, fryers, slicers, and knives
- Reliable attendance and punctuality required
- Responsible for bringing and maintaining personal cutlery tools/knife roll
- Food Handler Certification

Job Duties
- Prepare and execute breakfast and brunch menu items according to culinary standards
- Support restaurant outlets, banquets, and private event culinary operations as needed
- Maintain understanding of cooking times, temperatures, and plating expectations as directed by the Chef team
- Ensure proper kitchen opening and closing procedures are followed
- Maintain clean, organized, and sanitary workstations throughout the shift
- Properly handle, label, store, and rotate food products
- Work efficiently in a high-volume, fast-paced kitchen environment
- Assist with mise en place and station preparation for service
- Maintain professionalism, teamwork, and communication during service
