The A La Carte Sous Chef position at Coronado Club is a key leadership role within the culinary department, reporting directly to the Executive Chef and Executive Sous Chef. This role is ideal for a motivated and skilled culinary professional who thrives in a dynamic, high-volume kitchen environment. The Sous Chef is responsible for supervising kitchen personnel as required, ensuring strict adherence to culinary standards and safety regulations. Job Requirements

  • High school diploma or equivalent
  • Proven experience as a sous chef or in a similar culinary leadership role
  • Proficient in butchery, meat and fish fabrication
  • Foundation in baking methods, unit conversions, and standardized recipes
  • Strong knife skills
  • ServSafe certified
  • Ability to work in a high-volume production environment
  • Physical ability to stand, walk, climb stairs, stoop, kneel, crouch, crawl, and sit for up to eight hours
  • Able to lift up to 50 pounds
  • Clean and pressed uniform adherence including white chef's coat, black chef's trousers, black non-skid shoes, hair restrainer, black chef's hat, and plain undershirt

Job Duties

  • Report to work promptly
  • Communicate clearly and develop strong working relationships with front-of-house staff
  • Have a clear understanding of each station in the kitchen
  • Adhere to standardized recipes
  • Keep event and batch recipes accessible to all kitchen staff
  • Responsible for all food production from start to finish including cleaning and organizing refrigerators
  • Focus on food safety and maintain a clean working environment
  • Consistently check food temperatures and follow proper chilling, reheating, and holding procedures
  • Cost all standardized recipes and dishes
  • Minimize waste and spoilage
  • Participate in menu development and plate design
  • Create a positive working environment
  • Maintain all standards as laid out in the Coronado Club Handbook
  • Assist Executive Chef and Executive Sous Chef with culinary staff development and training
  • Maintain cleaning standard checklists and assist with final inspections
  • Act as liaison between chefs de partie and supervisors
  • Manage inventory, ordering, labor, food costing, and employee training
  • Aid in developing daily specials and menu offerings
