The role of a Wok Cook at HMSHost focuses on the preparation and execution of wok-cooked menu items, specifically supporting the Pei Wei restaurant concept within the HMSHost family. This hourly position starts at a competitive wage of $23.25 and offers a vibrant team-oriented atmosphere where attention to detail and quality are paramount. As a Wok Cook, you will be responsible for following precise cooking techniques and recipes to ensure consistency and excellence in every dish served. You will prepare all wok-cooked items from scratch, manage the wok station setup for each shift, and maintain the highest standards of food safety and sanitation in accordance with HACCP regulations. The role demands the ability to multitask efficiently, including operating multiple woks simultaneously, handling various kitchen equipment safely, and performing timely product inspections and quality controls. This position reports to the Store Manager, Assistant Store Manager, or Operations Director and works in close collaboration with team members to deliver exceptional customer experiences. Beyond cooking, the Wok Cook plays an essential role in stock management by rotating and checking temperatures of products and supplies. Job Requirements
- Minimum of 6 months of wok-cooking experience where food is prepared to order including ability to work two woks simultaneously, preferred
- if no previous wok experience requires a minimum of 9 months of sauté experience in a high volume and high prep casual dining kitchen along with successful completion of wok-training program
- requires food preparation skills and knowledge of HACCP standards
- requires the ability to speak, read and comprehend instructions, short correspondence and policy documents, as well as converse comfortably and professionally with individuals
- requires the ability to work in varied kitchen temperatures up to very warm cooking environments
- must be able to wok-cook, stand and/or walk for period of up to nine hours
- must have the ability to handle a knife
- must have exceptional skills in handling all product and specialty ingredients and quality control
- must be able to adapt to changes in new menu items and cooking techniques
- must be able to read and understand associated recipes, prep lists and pars
- must have the capacity to perform basic math and measurement calculations associated with recipes
- requires the ability to reach, bend, balance and transport various objects weighing up to 30 lbs repeatedly throughout the shift, at times product weight may reach 50 lbs
- requires the ability to speak, read and comprehend instructions, short correspondence and policy documents, as well as converse comfortably and professionally with individuals
Job Qualifications

Job Duties
- Follow recipes and product directions for preparing and wok-cooking all specified menu items
- work with a sense of urgency to meet time goals while adhering to recipe standards and display attention to detail and food presentation
- taste products, follow menus, estimate food requirements, check production, and keep records to accurately plan production requirements and requisition supplies and equipment as needed
- perform basic math and measurement calculations associated with recipes
- operate kitchen equipment such as buffalo chopper, fryers, cleavers, etc
- handle knives safely and wear a cut glove regardless of knife size
- maintain quality control for all products including monitoring freshness
- clean and sanitize work stations and equipment
- follow excellent food safety and sanitation practices and comply with HACCP standards
- stock, date, rotate, and check temperature of product
- receive, move, and lift food and beverage products and supplies
- comply with HMSHost and franchise policies as well as regulatory requirements
