The Wok Cook position at HMSHost's New Orleans Airport F&B location offers a chance to be part of a vibrant team serving the popular Pei Wei concept. This role requires a minimum of six months' wok-cooking experience or equivalent sauté experience in a high-volume casual dining kitchen. The ability to manage multiple woks simultaneously, maintain food quality, and operate various kitchen equipment safely is essential. The Wok Cook will engage in food preparation tasks such as tasting products, estimating food requirements, and following recipes with precision. Food safety and sanitation compliance, including adherence to HACCP standards, is mandatory to ensure the health and safety of customers and staff alike.

Working at HMSHost in this capacity also requires physical stamina to stand or walk for up to nine hours, handle knives safely while wearing cut gloves, and lift or transport food products weighing up to 50 pounds occasionally. Job Duties

  • Follows recipes and product directions for preparing and wok-cooking all specified menu items
  • works with a sense of urgency to meet time goals while adhering to recipe standards and displays attention to detail and food presentation
  • tastes products, follows menus, estimates food requirements, checks production and keeps records to accurately plan production requirements and requisition supplies and equipment as needed
  • performs basic math and measurement calculations associated with recipes
  • operates kitchen equipment including buffalo chopper, fryers, and cleavers
  • handles knives safely and wears a cut glove when doing so
  • maintains quality control for all products including monitoring freshness
  • cleans and sanitizes work stations and equipment
  • follows excellent food safety and sanitation practices complying with HACCP standards
  • stocks, dates, rotates and checks temperature of products
  • receives, moves and lifts food and beverage products and supplies
  • complies with HMSHost and franchise policies and applicable regulatory agencies
