Job Qualifications
- Minimum of five years progressive experience in a luxury hotel or restaurant environment
- Court of Master Sommelier certification or WSET required
- proven track record developing beverage programs with a focus on wine
- knowledge of food and beverage preparation techniques
- knowledge of health department rules and regulations
- knowledge of liquor laws and regulations
Job Duties
- Plan and oversee all aspects of the beverage program
- maintain strong and collaborative relationships with vendors
- establish operational standards, budgets, cost-control measures, and inventory systems
- lead floor shifts in outlets as needed
- ensure consistent training programs for serving and bartending colleagues
- partner with purchasing team for proper requisitioning
- order beverages accurately and account for monthly inventory
- maintain wine par stock
- curate beverage menus partnering with vendors
- participate in banquet menu tastings to guide clients
- supervise F&B personnel including performance evaluations and coaching
- respond to guest complaints promptly
- prepare and monitor F&B budget and departmental performance
- ensure accurate payroll accounting and tendered transactions
- monitor industry trends and maintain competitive operations
- coordinate and monitor Loss Prevention in F&B
- prepare and submit required reports
- monitor quality of service and product
- create wine lists and provide descriptions
- suggest food and wine pairing
- conduct staff and customer wine tastings
- drive beverage sales to achieve budget
- manage beverage cost to budget
- cooperate in menu planning and preparation
- ensure timely purchase of F&B items within budget
- ensure compliance with liquor laws and health regulations
- ensure departmental compliance with SOPs
- attend and conduct departmental and hotel training
- coordinate with chef to create pairing menu
- host wine events for guests and residents
- interview candidates and follow hiring standards
- ensure overall guest satisfaction
