Part of Marriott's Autograph Collection, this iconic establishment brings together a blend of classic Art Deco and Greek Revival architecture, creating a unique ambiance that pays homage to the city's rich history. Originally built in 1927 as the first skyscraper in Baton Rouge and serving as the headquarters for Louisiana Trust & Savings Bank for more than 50 years, the building retains many original features such as murals by renowned New Orleans artist Angela Gregory, carved marble walls, and a grand staircase leading to the original bank vaults. Watermark BR is currently seeking a full-time Chef de Cuisine to join its culinary team. This pivotal role is responsible for overseeing all kitchen operations, ensuring that every dish prepared meets the highest standards of quality, consistency, presentation, and taste. The Chef de Cuisine plays a crucial part in maintaining food costs and optimizing labor efficiency while prioritizing guest satisfaction.
The position requires a strong culinary background, with at least four years of progressive experience in a similar role or a culinary graduate with a minimum of two years in a hotel or related environment. The ideal candidate will have comprehensive knowledge of food and beverage preparation techniques, health department regulations, liquor laws, and safety standards.
As the Chef de Cuisine, the successful candidate will work closely with other food and beverage managers, ensuring smooth communication and handling of any issues that arise. Duties include training kitchen staff, enforcing portion control and food specifications, maintaining sanitation and compliance with local health codes, and coordinating all phases of kitchen operations. This includes managing the preparation of hot foods, bakery items, and cold food stations, while monitoring quality and visual appeal for every plate served.
This position also involves close collaboration with the Director of Food and Beverage to develop and implement diverse menus that reflect the restaurant's high standards and guest preferences. The Chef de Cuisine will be responsible for preparing accurate reports related to food cost, labor, payroll, revenue, scheduling, and quarterly planning to support efficient restaurant management.

Job Requirements

Job Qualifications

- proficiency in menu planning and cost control
Job Duties
- Work with other F&B managers and keep them informed of F&B issues as they arise
- keep immediate supervisor fully informed of all problems or matters requiring his/her attention
- coordinate and monitor all phases of Loss Prevention in kitchen areas
- prepare and submit required reports in a timely manner
- monitor quality of all food product and presentation
- ensure preparation of required reports, including wage progress, payroll, revenue, employee schedules, quarterly action plans
- oversee all aspects of the daily operation of the kitchen and food production areas
- make cooks aware of daily forecasts and customer counts to adequately prepare hot and cold food on time
- know and enforce all local health department sanitation laws
- compute daily food cost
- work with the Director of Food and Beverage to create and implement menus
- assess food portion size, visual appeal, taste and temperature of items served
