The Warehouse Assistant Chef role at Pechanga Resort Casino is a critical position that ensures the integrity, quality, and safety of all food products received into the warehouse for the casino’s extensive restaurant operations. This position requires close collaboration with the Purchasing, Receiving, and Culinary teams to verify that all incoming deliveries meet stringent culinary standards, vendor specifications, and safety guidelines prior to acceptance and storage. The Warehouse Assistant Chef acts as a guardian of food quality, performing detailed inspections of incoming goods including temperature checks, labeling accuracy, packaging integrity, and compliance with established purchasing guidelines.

This role is designed for an experienced culinary professional familiar with high-volume kitchen environments, particularly within resort or casino settings. The Assistant Chef conducts thorough documentation and monitoring through receiving logs, temperature records, and inspection reports, ensuring all processes align with HACCP (Hazard Analysis Critical Control Points), health department requirements, and company sanitation standards. Additionally, this role supports inventory management by facilitating proper labeling, product rotation, and utilization of the First-In, First-Out (FIFO) system.

The Warehouse Assistant Chef is also involved in vendor communication, resolving any discrepancies related to product quality or substitutions, and participates in product tastings and specification updates to remain current on quality benchmarks. This position holds supervisory responsibilities, including team member relations, mentoring, budgeting considerations, and maintaining a positive workplace culture founded on professionalism and resource management.

Candidates for this position must be capable of working independently within a fast-paced environment while managing multiple priorities, maintaining exceptional organizational skills, and demonstrating impeccable attention to detail. Flexibility in scheduling, including availability on weekends and holidays, is required. Physical requirements include the ability to stand and lift products weighing up to 50 pounds throughout the work shift. Proficiency in computer applications such as Microsoft Office and inventory management systems is essential.

Job Requirements

  • High school diploma or GED
  • Minimum three years of culinary experience in a high-volume kitchen, resort, or casino environment
  • Prior experience in receiving, food inspection, or quality control preferred
  • Strong knowledge of food safety, temperature control, and product handling standards
  • Ability to identify quality discrepancies in meat, seafood, produce, and dry goods
  • Excellent organizational and communication skills
  • Ability to work independently in a fast-paced environment with multiple priorities
  • Proficient in Microsoft Office and inventory management systems
  • Must be able to stand and lift up to 50 pounds throughout the shift
  • Ability to work flexible hours including weekends and holidays
  • Ability to obtain and maintain Class "A" gaming license
  • Must maintain Food Handler’s or equivalent food safety/health card
  • Valid driver’s license

Job Qualifications

Job Duties

  • Inspect all incoming food deliveries for quality, temperature, labeling, packaging integrity and compliance with product specifications
  • Verify that products meet culinary and vendor standards before acceptance into inventory
  • Work closely with the Purchasing Department to confirm product substitutions, shortages and quality discrepancies
  • Reject or quarantine any items that do not meet food safety, freshness or specification requirements and document findings accordingly
  • Monitor and maintain proper receiving logs, temperature records and inspection documentation
  • Coordinate with Executive Chefs and outlet Sous Chefs on product quality issues, vendor concerns and product evaluations
  • Ensure that all receiving and storage areas are maintained in compliance with HACCP, Health Department and company sanitation standards
  • Assist with rotation and organization of perishable products to ensure First-In, First-Out (FIFO) usage
  • Support inventory accuracy through proper labeling and verification of product counts
  • Participate in vendor tastings, specification updates and training to stay current with product expectations and quality benchmarks
  • Assist the culinary leadership team in developing and enforcing receiving and storage procedures to ensure consistency across all outlets
  • Other duties as assigned
