Job Requirements

  • Must be over 18 years old
  • Must be authorized to work for any U.S. employer
  • Experience in food preparation including washing, peeling, chopping, slicing, and dicing
  • Proficiency in handling and using knives
  • Ability to work evenings, weekends, and holidays as required
  • Willingness to work in a fast-paced kitchen environment
  • Ability to lift heavy objects like pots and pans
  • Must adhere to food safety and sanitation regulations

Job Qualifications

  • Certification as a food handler preferred
  • Proven experience as a line cook or sushi line in a similar culinary role
  • Knowledge of sushi techniques and authentic Japanese cuisine preferred
  • Familiarity with kitchen equipment operation and maintenance
  • Ability to prioritize tasks and manage time effectively
  • Strong focus on accuracy, consistency, and quality
  • Excellent communication and teamwork skills
  • Ability to withstand standing long hours and heat
  • Relevant certifications such as sushi chef certificate or culinary degree are a plus
  • Valid California Driver License

Job Duties

  • Ensuring the store is neat, clean, and presentable
  • Providing proper customer service as per company standards
  • Fulfilling task lists and schedule requirements timely
  • Setting up and stocking stations with supplies and ingredients
  • Preparing and executing menu items including appetizers, entrees, and sides
  • Utilizing advanced knife skills for fish butchery and ingredient preparation
  • Cooking and grilling food according to specified methods and portions
  • Preparing and assembling sushi rolls, nigiri, and other sushi dishes
  • Adhering to food safety and sanitation standards
  • Monitoring and managing cooking times
  • Ensuring all dishes meet quality standards
  • Coordinating with kitchen team
  • Assisting in inventory monitoring
  • Participating in cleaning and maintenance
  • Washing and sanitizing dishes and kitchenware
  • Handling and storing kitchen equipment properly
  • Organizing and stocking clean dishes and utensils
  • Maintaining cleanliness and safety in the kitchen
  • Adhering to waste handling and disposal regulations
  • Assisting in food preparation, plating, and cleaning duties as needed
