The DSOD Associate – Backhouse position at Marukai Corporation, Wakasakura is an essential role within the restaurant team, designed to underpin the successful operation of the kitchen.   • certified food handler is preferred
  • experience in food preparation including washing, peeling, chopping, slicing, and dicing
  • proficiency in handling and using knives
  • proven experience as line cook or sushi line in culinary role
  • knowledge of sushi techniques and authentic Japanese cuisine is a plus
  • familiarity with operating and maintaining kitchen equipment such as grills, ovens, and fryers
  • ability to prioritize tasks and manage time effectively in fast-paced environment
  • strong focus on accuracy and precision
  • excellent communication and collaboration skills
  • ability to withstand long hours standing and working in a hot kitchen
  • willingness to work evenings, weekends, and holidays
  • relevant certifications such as sushi chef certificate or culinary degree
  • valid California driver license

Job Duties

  • Ensure the store is neat, clean, and presentable
  • provide proper customer service as per company expectations
  • fulfill task list and follow schedule requirements timely and accurately
  • set up and stock stations with necessary supplies and ingredients before shifts
  • prepare and execute a variety of menu items including appetizers, entrees, and sides
  • utilize advanced knife skills for fish butchery and ingredient preparation
  • cook and grill food items according to specified methods and portion sizes
  • prepare and assemble sushi rolls, nigiri, and other sushi dishes
  • adhere to food safety and sanitation standards
  • monitor and manage cooking times and coordinate with kitchen staff
  • ensure all dishes meet quality standards
  • work as part of kitchen team supporting communication and harmony
  • assist in inventory management and notify supervisors of shortages
  • participate in cleaning and maintenance tasks
  • wash and sanitize dishes and utensils promptly
  • store dishes and equipment properly
  • organize and stock clean dishes and utensils
  • maintain cleanliness and orderliness of dishwashing area
  • adhere to waste handling and disposal regulations
  • assist in other restaurant areas as necessary
