Job Description

The resort boasts multiple food and beverage outlets, banquet facilities, and bars, all designed to provide extraordinary guest experiences with a focus on quality, service, and innovation. The Vice President of Food and Beverage at Grand Sierra Resort plays a critical leadership role within the hospitality division. This full-time executive position is responsible for directing all functions of the Food and Beverage Department, including strategic planning, operational execution, and financial management. The role encompasses oversight of 12 food outlets, 6 bars, a banquet department handling 200,000 square feet of meeting space, and stewarding operations. The VP of Food and Beverage works closely with executive leadership to develop and implement marketing and promotional plans, manage cost of goods sold (COGs), revenue, and profit levels, and drive team member engagement across front and back of the house operations.

A key aspect of the position includes maintaining outstanding guest service standards aligned with the Grand Sierra brand, directly interacting with guests to collect feedback and ensure satisfaction. The role demands a hands-on approach to maintaining food safety, cleanliness, and compliance with regulatory standards such as SNHD food safety, OSHA, fire, and life safety regulations. Collaborating with various departments like casino marketing, entertainment management, stewarding, and maintenance is essential to foster a smooth and efficient operation.

The Vice President of Food and Beverage is also accountable for financial reporting, budgeting, forecasting, and cost control across all outlets and departments. They play a pivotal role in staff development through training oversight and performance management, with a focus on creating a positive, communicative work environment. In addition to managing operational details, the VP will act as a liaison between the resort’s Food and Beverage division and owned and managed outlets, leased partners, and corporate divisions to ensure cohesive strategies and excellent service delivery. This role requires exceptional organizational and leadership skills, the ability to manage complex operations, and a passion for elevating guest experiences through culinary and beverage excellence. Candidates must be able to work flexible shifts, including nights, holidays, and weekends as business needs dictate, and hold a valid Gaming License and Alcohol Awareness certification.

Job Requirements

  • Minimum bachelor degree in hospitality, business administration, or related field
  • 10 years food and beverage management experience in casino/resort settings with 8 or more outlets
  • must maintain appropriate Gaming License and Alcohol Awareness card
  • must be a minimum of 21 years of age
  • flexible to work all shifts including holidays, nights, and weekends
  • ability to complete complex reading, writing, math and tasks
  • physical ability to occasionally sit, reach overhead, bend, crouch, kneel, balance, stand, and walk
  • able to push or pull 50 pounds or less
  • occasional repetitive use of hands and feet required
  • must pass background checks and maintain compliance with health and safety regulations

Job Qualifications

  • Minimum bachelor degree in hospitality, business administration, or related field
  • 10 years food and beverage management experience in casino/resort settings with 8 or more outlets
  • strong working knowledge of food service industry, cuisines, and beverages
  • experience directing, training, and developing food and beverage personnel
  • experienced in maintaining effective food and beverage controls in casino/hotel environments
  • proficient with food and beverage software and systems
  • excellent verbal and written communication skills
  • highly organized and able to prioritize and meet deadlines
  • proficiency in Microsoft Office products including Project, Word, Excel, PowerPoint, Publisher, and Outlook
  • strong skills in clerical work, coordination, analysis, supervision, instruction, problem solving, judgment, and decision making

Job Duties

  • Oversee all aspects of food and beverage division
  • manage 12 outlets, 6 bars, banquet department and stewarding
  • oversee banquets department with 200,000 square feet of meeting space
  • collaborate on marketing and promotional programming and plans
  • provide monthly forecasting to manage labor and service needs
  • oversee profit and loss statements including COGs, labor and supplies
  • provide financial reporting to ownership and general manager
  • set and execute annual budget, marketing and business plans for food and beverage
  • oversee all food and beverage training materials
  • develop and implement guest service standards consistent with company brand
  • interact daily with guests to obtain feedback
  • review guest comments and attend experience meetings
  • ensure maintenance and cleanliness of outlets according to food safety and regulatory standards
  • manage audit exceptions and supervise coaching and documentation
  • establish relationships with casino marketing and entertainment management for VIP guest experiences
  • direct maintenance and repairs
  • oversee ordering, requisitioning, inventory and product identification
  • foster positive work environment and open communication
  • perform other duties as assigned within the scope of this position
