The role available is a culinary position at TRUSS Restaurant + Bar within the Napa Valley resort, focused on preparing high-quality meals for breakfast, lunch, and dinner in accordance with stringent production and quality standards. This full-time position offers an hourly wage of $28.42 and requires flexible availability, including early mornings, mid-day, and evening shifts, to support the resort's 24/7 operational needs. The culinary team member is responsible for maintaining a safe and sanitary work environment while efficiently producing consistent food and pastry items following recipe cards, portion guidelines, and presentation criteria. Mastery of kitchen equipment operation and proper food handling protocols are integral to the role, ensuring that all perishables are correctly stored and food costs are controlled through minimizing waste.
Candidates should have a minimum of two years' culinary or related work experience and demonstrate proficient knife skills along with the ability to multitask effectively in a fast-paced environment. This position requires valid US work authorization, as it is not eligible for visa sponsorship. Job Duties
- Prepare consistent quality food and pastry items according to guest orders following recipe cards and production, portion, and presentation standards
- Complete mis en place and set-up station for breakfast, lunch, and/or dinner service
- Start food items that are prepared ahead of time, making sure not to prepare beyond estimated needs
- Effectively operate, maintain and properly clean kitchen equipment including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill
- Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures
- Return all food items not used to designated storage areas, being sure to cover/date all perishables
- Perform and maintain all actions that affect food cost
- control food waste, loss and usage per policies
