The role of Traveling Sushi Chef at Indigo Road Hospitality Group is crafted for culinary professionals with a passion for finesse and cultural cuisine, specifically in Japanese culinary arts. As a Traveling Sushi Chef, you will play a pivotal role in supporting and elevating the region's sushi concepts through expert preparation of nigiri, maki rolls, and other sushi varieties. This dynamic position requires frequent travel among the group’s restaurants, allowing you to share your culinary expertise across various venues while adapting to different kitchen environments and team structures.
Success in this role is measured not only by your culinary skills but by your ability to lead and inspire kitchen teams, uphold stringent quality and safety standards, and manage inventory and ingredient preparation with precision. Your deep understanding of ingredient combinations and flavor profiles is essential for creating memorable dining experiences that delight guests and uphold the brand’s high standards.
Furthermore, this position demands a hands-on leadership approach during busy service periods, fostering a collaborative and innovative kitchen culture. You will work closely with general managers and home office leaders to optimize kitchen operations, control costs, manage labor, and ensure adherence to budgets and forecasts. This holistic oversight aims to balance creativity with operational efficiency, guaranteeing that each location delivers excellent food while maintaining financial health.

Job Requirements
- 2+ years of successfully running a high-volume and upscale food focused kitchen
- Preferred background in elevated Japanese cuisine
- Hands-on working side by side with your team during prep and service
- Compassion for people and embrace IRHG core values
- Strong problem resolution skills and ability to proactively set the team up for success
- Exceptional organizational skills and keen eye for detail
- Experience with managing restaurant financials mainly dealing with food costs and labor
Job Qualifications
