The Tournant position at Caesars Entertainment represents a key leadership role within the culinary team. This is the highest-level hourly culinary position on the kitchen floor, reporting directly to the Sous Chef. The Tournant acts as the lead operational presence, overseeing multiple kitchen stations and outlets to ensure consistent quality, sanitation, training, and service delivery. As a multi-station expert and culinary leader, the Tournant is responsible for directing line cooks during service, maintaining operational excellence, and reinforcing company standards for recipe adherence, portion control, plating, and food safety. This role requires superior knife skills, the ability to adapt quickly to high-volume kitchen environments, and a comprehensive knowledge of culinary methods across a broad range of food types including vegetables, meats, poultry, seafood, and more.

Job Requirements
- Maintain clear communication between kitchen leadership and hourly staff
- Model professionalism, teamwork, and Caesars values
- Support a positive, inclusive, and respectful kitchen culture
- Ability to work at any station in any restaurant with thorough knowledge of all line positions
- Must be able to follow plate presentation and recipe specifications
- Reinforce culinary techniques, knife skills, station organization, and speed
- Validate skill competency across stations and kitchens
- Responsible for maintaining sanitation and safety as set by Washoe County Health Department Guidelines
- Utilize proper hand washing techniques
- Must be able to push, pull and lift/carry 50 pounds unassisted
- Must be able to work overhead
- Must tolerate repetitious hand/arm/wrist movements
- Must be able to stand and walk for most of the shift
- Must have ability to shift between multiple activities in a timely manner
- Must tolerate hot and cold temperature fluctuations
Job Qualifications
- High school diploma or equivalent
- Culinary degree and/or equivalent professional experience preferred
- Minimum 3 years of progressive culinary experience across multiple stations
- Must have superior knife skills
- Thorough knowledge of preparation of vegetables and fruits, meats, poultry and game, reconstituted foods, stocks, soups and sauces, fish and shellfish, egg and dairy products, farinaceous foods and cereals in applicable culinary methods
- Ability to read, write and count in English
- Excellent communication skills
- Strong teamwork and professionalism skills
Job Duties
- Lead kitchen execution during service under the direction of the sous
- Serve as the primary hourly point of contact for kitchen operations
- Direct line cooks during service to ensure smooth execution
- Step into any station or kitchen as needed to maintain service flow and quality
- Cook at busy change overs, callouts, vacations, breaks, volume surges as needed
- Maintain temperature log - cook to and hold time, includes hot and cold items
- Enforce recipe adherence, portion control, plating standards, and food quality
