The Tournant Restaurant Chef is a versatile and pivotal culinary leadership role within Graton Resort & Casino. This position entails rotating through various kitchen environments across multiple venues at the resort to provide interim management coverage during staff absences such as paid time off and leaves of absence. The role is essential in maintaining operational continuity across the resort's culinary operations. The Tournant Chef plans, organizes, directs, and supervises kitchen teams to ensure the seamless execution of all food production and service activities.

Working closely with venue leadership, the Tournant Restaurant Chef upholds the high standards associated with Graton's brand. This involves ensuring consistent food quality, presentation, and portion control, as well as timely meal service across breakfast, lunch, and dinner periods. The chef must be highly adaptable, able to integrate quickly into diverse kitchen settings, and provide strong leadership to kitchen staff.

A key part of the role is mentoring and training team members, fostering growth and professionalism within the culinary teams. The chef also manages inventory control and cost management to support efficient operations. Compliance with all health and safety regulations, including Department of Health standards and OSHA guidelines, is mandatory to maintain a safe and clean kitchen environment. This role demands a proactive approach to scheduling, team communication, and enforcing company policies while promoting a positive workplace culture.

This role requires a highly skilled culinary professional with at least five years of related experience, including two years in high-volume or fine dining environments. Job Requirements

  • Minimum of five years culinary experience in related fields
  • At least two years experience in high-volume or fine dining environments
  • Ability to adapt quickly to new kitchen environments and operational cultures
  • Ability to work in all aspects of kitchen operations including high-volume production
  • Proficiency in fine dining techniques such as butchering, baking, soups, stocks, sauces, roasting, sautéing, broiling, grilling, and cold food production
  • Strong communication skills in written and verbal form
  • Ability to work independently with minimal supervision
  • Flexibility to work nights, weekends, and holidays
  • Demonstrates maturity, sound judgment, and effective decision making
  • Must be 21 years or older
  • Must possess or obtain California Food Handler Certification
  • Ability to stand for long periods, walk frequently, bend or reach six feet
  • Capability to lift 50 pounds and push 150-250 pounds on a pushcart
  • Manual dexterity to operate job-related equipment

Job Duties

  • Perform duties in accordance with resort standards, policies, and procedures
  • Oversee daily kitchen operations ensuring smooth food production, team coordination, and service efficiency
  • Supervise and train kitchen staff by mentoring and supporting adherence to food preparation standards
  • Execute standardized recipes ensuring food quality, consistency, presentation, and portion control
  • Manage inventory and cost control by implementing inventory procedures and monitoring stock levels
  • Enforce safety and sanitation standards complying with health and OSHA regulations
  • Schedule and assign tasks ensuring optimal staffing and labor cost control
  • Facilitate team communication and engagement through daily huddles and updates
  • Uphold department policies by enforcing procedures and fostering a positive work environment
