The role of Sushi Cook at Benchmark International Arena is a part-time culinary position designed for individuals passionate about sushi craftsmanship and culinary precision. This role pays between $24.00 and $25.00 per hour. As a Sushi Cook, you will be a vital part of the kitchen team, responsible for preparing high-end sushi and sashimi dishes with an emphasis on consistency, presentation, and quality. You will work closely with Sushi Chefs and Executive Chefs to ensure that every order meets the established standards. Your duties include maintaining your station’s organization, assisting with ingredient preparation and inspection, adhering to strict food safety and sanitation standards following HACCP and local health regulations, and ensuring efficient service execution during high-volume events. This position demands excellent knife skills, attention to detail, and an ability to maintain the flow of orders in a fast-paced kitchen environment. Additionally, you will support daily sushi station operations, manage tools and equipment upkeep, and help deliver an exceptional dining experience that keeps guests returning. Job Requirements

  • High school diploma or equivalent
  • prior experience as a sushi cook or in a similar culinary role
  • valid ServSafe certification or equivalent food handler's permit
  • strong knife skills and sushi preparation techniques
  • ability to work in a fast-paced environment
  • knowledge of food safety and sanitation standards
  • effective communication skills
  • availability to work part-time hours

Job Qualifications

  • Demonstrates strong proficiency in sushi techniques, including nigiri, maki, and sashimi, with the ability to support basic Japanese hot and cold kitchen items
  • possesses a solid understanding of fish breakdown, sushi rice preparation, proper knife handling, and the use of traditional Japanese ingredients
  • maintains a high level of attention to detail with a consistent focus on quality, accuracy, and presentation
  • familiarity with omakase or chef's counter-style service is a plus
  • working knowledge of Japanese culinary terminology, seasonal fish varieties, and basic sake pairings preferred
  • holds a valid ServSafe certification or equivalent food handler's permit

Job Duties

  • Prepare and present high-end sushi and sashimi with precision and consistency, following house standards and traditional techniques
  • support the Sushi Chef with daily sushi station operations, including mise en place, production, and service execution
  • assist with receiving, inspecting, and handling seafood, rice, and specialty ingredients to ensure freshness and quality
  • execute prep and service tasks efficiently to support timely delivery during service, including omakase and a la carte offerings
  • maintain cleanliness, knife safety, and sanitation procedures in accordance with HACCP and local health regulations
  • follow established recipes, portioning, and plating standards to ensure consistency and quality
  • communicate effectively with team members to ensure smooth kitchen operations and service flow
  • maintain and properly care for tools and equipment, including knife upkeep and station organization
